Thanks so much, Dani! I made these last night for a light dinner and love them. I adjusted the spices to what I had on hand - no curry powder, soo I used some chili powder.. Plus I added mustard to the dipping sauce because I like mustard on or in almost anything. I thought it added a lovely tang so I highly recommend if you are so inclined.

My changes: single serving. 13 wedges. No dipping sauce. Olive oil. The only seasonings: 1 tsp curry powder, 1/4 tsp kosher salt, 1 tsp cane sugar. Same cooking temp and time. Wedges are crisp on the outside, tender on the inside, and absolutely delicious.

Hi! Thanks for all your great recipes and videos! Do you think this method of roasting sweet potatoes would work just as well with parchment paper on the pan for easier cleanup?

This is a very popular question! And while it would definitely work, I prefer to make them right on the tray as I find this helps the potatoes get a nice browned edges that they struggle to get on the parchment paper.

They are great with roasted or baked chicken, salmon or even as a side to a fresh salad when you want something light.

Great question! I find that using parchment for this recipe makes it. abt harder to get that golden browned edge which - is the reason I chose to oil the pan and cook the wedges directly on it.
