Watching you eat, today in Canada, I went to our only Asian supermarket and bought a real round steel wok. I bought the utensil for it and brought it home and cooked the wok twice with vegetable oil just to season it on my Weber grill. I also seasoned about 8bonless chicken thighs. In the fridge overnight, now, and boiled 4 packs of basmati rice now cooling off in the fridge for tomorrow. Got all of the ingredients to make this tomorrow. I have watched your channel for a time and I love how you like to eat good food. I am 50 and loving to learn this. Bless you and your family. May our Father always keep you healthy. Thanks for asking. It was quite an experience. I use the wok on the barbecue side burner, just to get the high heat, and it warmed my soul to finally make the tastiest fried Rice I could imagine. My wok has a round bottom, so I used the ring to hold it on the burner. Flames actually touch the wok. Merry Christmas to you and your family

He's addressed this before in a video. It's not random, it's years of experience. He's shown us his "random amounts" next to the measured amounts before and the shit is pretty much the same sometimes with extremely minor differences give or take. It's actually pretty amazing that he can just dump like that and his measurements are never wrong.

I wish he had explained how to prepare the rice. I just found out that the rice needs to be refrigerator cool, not warm when you add it to the other ingredients. So cook the rice and refrigerate it for a few hours before making the fried rice. On another note, he sure made that food look good while he was eating it!

Pro tip. Use soy sauce around the edge of the rice so it burns on the pan. You want to coat the rice not soak the rice. The flavour is amazing.

A tip, nothing crumbles up cold clumped up rice as good as just using your hands as you transfer it from a bowl or container and crumble it gently into the pan/wok. Having to chop up and press down clumped up rice can make it mushy and you want to see the separate rice grains and for the fried rice to consist out of nice separate fluffy grains.

Cook your rice and then chill it in the fridge overnight. It does something to the starch that makes it better in fried rice, it won't clump as much.

Honestly, he was using olive oil and that's the wrong oil to use for high heat cooking. It has a low temp burning point. Peanut oil is best for fried rice.
