I love watching other cultures cook and see new techniques as well as the similarities we share. It made me so hungry watch this. Great work! For those who don't know, eggshells in the broth help to purify/clarify the stock. In classic French cuisine we do the same with an egg raft for our consomme.
I'm a grandma, and it is so very, very soothing and satisfying to watch this gentleman work just as I do in my kitchen, cleaning immediately as he preps! It means so much in keeping a kitchen clean, tidy and organized! He has his routine perfected! I actually watch this at bedtime, watching him consistently perform the same perfect routine until it makes me fall asleep!

i agree. i have been a chef since '75, and although i have worked in every kind of environment there is, tight spaces are the most challenging to keep clean, and produce large quantities of decent food in. how these few people work in unison to produce so much excellent food is stunning. the routine is automatic, like flipping a switch. in the first half when he is prepping for the day i can sense his relentless pace to be ready by 10am. ithen when they start to put out orders, they get that smile of confidence and pride. i have lived it myself for years. once service starts, its like 1 man with 4 arms in the kitchen the way they work together. RESPECT!

@@glennchua9043 when i worked in Phuket we did not have aircon in the kitchen, most places do not. the room temperatures could readh 100F/37.7C, and in rainy season, the kitchen was like a sauna. combine the extreme heat, close working conditions, the work-place dangers that abound, and the speed with which you need to produce food and get it out to the guests, they all combine to make it one of the hardest jobs anyone could go to day after day, year after year. and the pay $$$ most often is below average.

I'm amazed at the efficient use of space in his kitchen. Would love to see him in action and taste his dishes in real life one day.
Watching this man do his prep for the day is incredible.. he is so efficient.. he is inspiring.. you can see that he loves what he does.. it shows in what his customers say about his food ❤

The whole operation looks like the result of a time and motion study, but it was probably just the older fellow doing this a few thousand times. Amazing.
The amount of prep to be done before the actual cooking process is just insane. This really requires pure dedication, passion and love. Makes me want to visit them when i am in Japan.

The key to this type of cooking is prep. That is how they get food out so fast and fresh! It's awesome!
They all are good workers and they all are great at what they do . The prepping before opening was terrific. My goodness the young chef working and working that skillet. Every thing is so clean .This owner should be proud. thank you for sharing.

Love seeing the prep work, makes you appreciate the food even more. Its not "just" a bowl of ramen or gyoza. Lots of work and dedication. This master doing everything for 28years. My kind of hero. 🍻
Yes. Excellent money, even on somewhat tight margins. He wisely charges a fair price, not cheap or inexpensive but not overly pricey either. His location helps, as does the fact he is in a small rental space . He increases seating capacity with outdoor tables, another smart move. Looks like a family business, so that definitely helps.

Thank you for this video! I learnt a lot watching him do his prep!!! The raised cutting board with a receptacle like a bowl or a bag to catch the cut veggies is genius! It's awesome how much he can get done, alone, in this tiny kitchen!!

He's a machine... the amount of work and steps that is needed to get ready for the day. Not many people could do this one day let alone decades. I even love watching his technique when putting a towel on the handle of the wok, using chopsticks to fold in the excess into the handle and securing with rubber bands.

My family and I have been going to this place since 14’ when we visit home. Their fried rice is one of the best we ever had. Try it out when you visit.
chefs like this man, whether he does this because he's passionate about his craft, or he loves seeing customer enjoy his food or to just pay the bills, have my utmost respect, to do something so physically demanding for 28 years, that alone is worthy of commendation, wish for him all the luck and blessings in the world.
