I just made this for the first time for my wife and daughter. I think i used a dab too much corn starch in the marinade and was definitely not ready for how fast i needed to move to blanche the noodles for 30 seconds, BUT my wife said "you knocked it out of the park!" and my 4 year old said "daddy, can we eat this again". Thank you so much for sharing you joy and passion with the rest of us. This was such a tasty dish and we've got plenty of leftovers!

Rinse your chicken with a mixture of water and vinegar, let it soak for approximately 2 minutes. Rinse and then marinade. Tenderizes the meat just as well.

Beginners don't use high fire. Large batch stir fried, between switching from small to medium fire will be better during the stir fried. Small batch high fire are more manageable for experience cooked.

I love crispy fried noodles, the wide ones, dipped in duck sauce. You can make chow mein with celery, onions, bean sprouts and chicken or shrimp or beef. I used a recipe from the can of bean sprouts. You just add soy sauce and cornstarch to make a sauce, after you sautee' the vegetables and add the meat. Other vegetables are optional. If you don't have them handy, you can simplify, but either way, chow mein is delicious. I always served it with rice, but the noodles are good too. A plain bowl of white rice is delicious. It's a comfort food and also has protein for energy. Thank heaven for rice.

Oh YES you most certainly can!! I make it all the time in my apartment. And believe me when I say, our fire alarms are very sensitive. Bacon is almost never eaten here in my building. But Cantonese chicken chow mein is a huge winner in my apartment. And I manage to do it on an electric stove top to boot!!

Love your food! Be careful not to use olive oil at very high temperature, it actually has a low smoke point and can give an off flavor in your finished dish. It’s much better to use peanut oil, it has a high smoke point and a wonderful end flavor.
