👨‍🍳 What you'll need:
For the Quesadilla Filling
Soybean Oil- a little
Onions- 2 medium (sliced)
Garlic- 1 tablespoon (chopped)
Green Chillies- 2-3 (chopped)
Button Mushrooms- 2-3 (sliced)
Bell Peppers- red and yellow (sliced)
Cherry Tomatoes- 2-3 (sliced)
Salt- to taste
Coriander- a handful (chopped)
Cumin Seeds (Jeera)- 1 tablespoon
Red Chilli Powder- to taste
Sweet Corn- a little (cooked)
Water- as required
For the Mango Salsa
Black Beans- 1 cup (cooked)
Ripe Mango- 50 grams (diced)
Raw Mango- 50 grams (diced)
Black Pepper- ½ teaspoon
Spring Onions- 2-3 (chopped)
Cherry Tomatoes- 2-3 (chopped)
Lemon Juice- 1-2 teaspoons
Green Chillies- 2-3 (chopped)
Coriander- a handful (chopped)
Soybean Oil- 1 teaspoon
For the Quesadillas
Whole Wheat Tortilla Sheets- as needed
Mozzarella Cheese- 1 tablespoon (per quesadilla)
Process:
• Prepare the Quesadilla Filling: In a pan, heat a little soybean oil. Add the sliced onions, chopped garlic, and green chillies. Sauté until the onions are translucent. Add the sliced mushrooms and bell peppers. Toss and cook for a few minutes. Add the cherry tomatoes, salt to taste, chopped coriander, cumin seeds, red chilli powder, and sweet corn. Mix well. Pour in water as needed and cook until everything is well combined. Remove the filling from the heat and transfer it to a bowl.
• Make the Mango Salsa: In a bowl, combine cooked black beans, diced ripe and raw mango, black pepper, chopped spring onions, chopped cherry tomatoes, lemon juice, chopped green chillies, chopped coriander, and soybean oil. Mix well and set aside.
• Assemble the Quesadillas: Take a whole wheat tortilla sheet and fill it with the quesadilla filling. Add 1 tablespoon of mozzarella cheese and a little chopped coriander. Fold the tortilla in half to create a quesadilla. Repeat with the remaining tortillas and filling.
• Cook the Quesadillas: In the same pan, add a little oil and heat it. Place the folded quesadillas in the pan and cook until golden brown and the cheese has melted, flipping once.
• Serve: Remove the quesadillas from the pan and cut them into wedges. Serve hot with the mango salsa on the side.
