I do the same thing. I use Ancho chili powder for my sauce. Then I use tomato paste so I can half dilute it. I freeze it for future use. Then I and more water, chicken bullion, and other spices. My boys are very spoiled. I tried to get away with the canned stuff once. 😅 They are now in their mid to late 20's and still remind me about it. 🫣 So now I'm Teaching them how to make my recipe. I swear my younger son's last girlfriend was dating him because he can cook. 😂

I’ve lived in Mexico, Arizona, Nevada, Texas and now Colorado and always had access to quality guajillo powder. I generally make my own, but I wanted to share for those that need a reference to a good chile powder. This one is my favorite because like you said, it’s everywhere in CO 🙌🏽

Los Palmas canned enchilada sauce has l little secret the mild one has no side effect the hot one has no side effect but the medium one has a crazy side effect that is good for pranking someone it's not hot whenever you eat it but the next day when you poop it burns like hell coming out 😮
