Hi Mystery Baker! Love your videos! Can you tell me when putting scones in oven do you place them on bottom rack or middle? Also, do you use parchment paper on baking tray? One more question I live in Montreal, Quebec if I can’t get the red cheese what can I use in place ? Thank you! Kathy

Hi Kathy, I place them in the middle of the oven. I do use parchment paper (greaseproof paper uk) too. You could use a local hard cheese, like pacific rock for example. A mature cheese will add to the cheesiness of flavour. Hope that helps? Xx
