I didn't understand why should I use "desu ne" with the format adjective + noun... actually, I didn't get it why I would sound like an idiot if I didn't put the "ne" at the end. 😂 But anyway, I accept that it's just the way the language functions and follow it!

It's more about the perceived attitude. It is unnatural in Japanese culture to express opinions with full affirmation, the 'ne' adds the feeling of speaker's consciousness of a certain degree of uncertainty and willingness to seek acknowledgement from the listener. If you just say something is what you think it is without considering if the listener agrees with it, it will sound inconsiderate to a Japanese listener who is conditioned to a culture which always seeks acknowledgement. It might even sound rude depending on what you are asserting an opinion on. In short, it's more about building a humble attitude in your language in general, as that is most proper and natural way of speaking in Japanese.

Besides what has already been stated, without "ne" the statement might be about yourself. For instance, imagine the expression "it's a good grade" (at a test): are you stating that you got a good grade or are you complimenting your friend on theirs?

This video's really helpful as usual! :)) I have a question in mind though. Why is it you must not use は? And what are your thoughts or what do you feel whenever someone uses くつはかわいいです instead of くつかわいいです?

It's because は can be used to contrast the thing it marks from other things, so "くつはかわいいです" risks sounding a bit like you're implying "Your shoes are cute... but not the rest of your outfit."
