Banana bread success! I had to add an extra cup of oat flour to the mix though, because it was too wet. Cooked for 50 mins at 170, in a fan oven. Its so nice.

TIPS FOR WHEN MAKING THE BANANA BREAD: • For a slightly more banana flavor, blend 1 banana and hand mash the others. Mix into the bowl after wet ingredients are poured in. • For the flaxseed egg, place in the fridge for 20 minutes and whisk them every 5 minutes for the gel texture which will help the ingredients stick together, like regular eggs do • If using a conventional oven, preheat to 325 and cook for 50 minutes Ive made this bread 4 times already and these changes have made it taste absolutely delicious. For the banana bread I cooked it at 350F. I checked it at 1 hour 5 mins and again 5 mins later my check it stab was still coming back not done. I feared the middle gooie yumminess was the reason. And I was worried the bottom would be over done so I pulled it out. Top layer was delicious and the right Consistency for banana bread. The bottom layer was over done on the bottom, The consistency was dense and still gooie as if it was under cooked. The top layer was just right. Next time I’ll only cook half the batter at a time and not layer it.
