I grew up in Trinidad with a mango tree and a coconut tree in my Granny's backyard and weekends were mango chutney/curry mango/red mango/kuchela (and soursop ice cream!!!) making time and I was her little helper, so my kids are obsessed with all those things now, lol! ALSO...Matouk's green seasoning is great with Caribbean-inspired dishes too. It's perfect for when you're in a pinch and don't have time to prep your seasonings. It's another Trinidad-made product that I grew up seeing in my Granny's kitchen. She had her own special green seasoning recipe that she'd keep in a glass bottle too of course, but Matouk's was an awesome option as well. Thank you so much for your videos, btw. You are a treasure!!

you can, depending on the size of your pan, you might need to make the roti a little smaller so it fits and gets an even distribution of heat 🧡

This is a big Buddha bowl feast! Everything is delicious. Never thought of using artichoke for the saltfish. I would add some ripped up nori and dulse too. Gives it that "fish" flavor -- if that's what you're looking for.

I have been craving fish cakes (that’s what we call the salt fish fritters in 🇧🇧Barbados🇧🇧 )since I became vegan and it’s really great to find some West Indian vegan recipes to make the transition more familiar.
