@@suzannegaglie6146 : gabapentin, the hospital put me on it, my doc never treated me, she’s lousy. Sorry am just now seeing this. I found a couple of items at Sprouts, they were wonderful for the nerve pain. No one really helped. I’m in 4th month of shingles. We surmised that doctor probably gave it to me. I don’t ever remember having chicken pox, so when they gave me the preventative injection, they were introducing pox to my body. Now I tell people to think hard before they get the vaccine. I only had measles.

Thanks for this yummy version of roasted potatoes. Roasted potatoes are a favorite. I usually smash the boiled potatoes with the bottom of a glass when on the cookie sheet and then roast and season them on both sides. Lots of surface area to get all crispy. Great for so many holiday meals or any meal!

I love your videos! for us older cooks as well as for new cooks, you always explain why you do things a certain way! Great job! The only thing I do differently is I microwave my garlic, rosemary and olive oil mixture in 30 sec increments, (it softens and partially cooks the garlic) before I add it to potatoes at the last few minutes of cooking

I like making roasted potatoes with carrots, onions and sometimes sweet potatoes. I use salt, pepper, garlic powder and Italian seasoning with some vegetable oil. Mix well and put on a cookie sheet. They’re great to reheat in a pan with some butter and use like homefries. Then have fried eggs and toast with them. I like the way you made your roasted potatoes and how nicely the crisped up. I've done your dish almost the same as you except i don't put carrots & sweet potato's together in the same dish & no Italian seasoning. This way I have 2 dishes depending on if I want carrots or sweet potato's, love lots of onions N garlic. Sometimes i only make the vegetables since i'm not a big meat eater.

Your technique is great, but you will increase your nutrition if you add cauliflower and broccoli. SO delicious roasted, marvelous texture, and they beat potatoes and carrots for your health. Roasted cauliflower changed my world!

We make something very similar except we marinate the cut potatoes in balsamic vinegar and oil for an hour before roasting. Gives them a tang along with the garlic.

We grow our own potatoes so they are never uniform in shape and size. Good tip to cut them into uniform pieces. I am always looking for good potatoe recipes for the holidays that are different, because we all get tired of the same old things. We are doing a taco bar for Christmas so I think these would go great with a few spices in them. Thank you!

Oh! Yeah, I tried a similar recipe but it turn out as nice as yours. That recipe didn't mention parboiling the potatoes. I've parboiled before but it's been with larger potatoes; didn't think much about it since the potatoes were petit. NOW I know better!! Thanks to you❤

Strangely, in my part of the world, chillies and potatoes are popular but very few varieties available. There are religious groups that have many food taboos that include potatoes. They substitute green raw bananas for chips and wafers. Thanks Rachel, always a very interesting presentation 👍

I made these potatoes as well for Thanksgiving dinner. I cut them the short way so that I wouldn't run out of space on my baking sheet. I was so pleased to learn the technique of parboiling and then roasting. What a difference!
