So for the Taylor Swift cookie, I have a suggestion. We made them for Christmas and also didn’t love the dough, so we took our own sugar cookie dough and added the chai to it and then added the icing, those were so much better. So if you have a favorite sugar cookie recipe, try that, bc the chai spice is amazing. We also added extra chai.

Does the icing eventually harden, like a royal icing? Or does it smooth out and stay kinda soft like grocery store bakery cookies?

@@mvpgale, Hubby’s Danish grandma was the first child born in the US (two sisters were born in Aalborg). Hubby’s dad and my mom were both of Norwegian descent. When it came to hammering out names, I wanted Peter for a boy, after my Italian paternal grandfather. Hubs refused because “peter”, though I pointed out the more current moniker was to call it a “johnson”. So I proposed we use one of his middle names, Kristian (Danish spelling). He didn’t like that either, so I put my foot down at Kristopher with a K. I’d have gone full Scandinavian spelling it with two Fs (Kristoffer). But Hubs thought that was too much, despite the fact that we live in a very Scandinavian state, so K plus PH it was. It turned out he still went to high school with two other Christopher/Kristophers ending up in the same classes. (And I think the other Kris did spell his name with FF rather than PH.) The teachers couldn’t say “Kris with a K” because they’d both answer. They couldn’t say “Chris/Kris M” because both he and the other kid would answer. So the teachers and his classmates started just calling him by our last name.

It's the tea that made them dry (I think)! Tea can soak up a lot of the moisture from the dough mix so most times I've seen people baking with it they've said the dough has to have a bit more moisture than you might think

You can actually lower the paddle attachment There is a screw that you can loosen/tighten to make it the perfect height for mixing!

Ahem Aussie Kiwi in the house Rachel ANZAC stands for Australia NEW ZEALAND Army corps. Some of these suggestions are hotly contested as being New Zealand deserts as we share a lot of cultural roots and rivalry. May I suggest a Pavlova topped with lemon curd then cream on top with strawberries and gold or red Kiwi Fruit to finish it off.

My favorite cookie adaptation is one I came up with (not saying I created it, just what I played around with). Make a standard chocolate chip cookie dough, crush up a sleeve of Graham crachers, put 1/2 cup in the dough. Add 1 cup mini marshmallows. ROLL dough balls in the rest of the crushed crackers, smoosh down and place 3-4 mini marshmallows on top, and bake for the directed time of the cookies. BEST smores cookies. My hubs does not have a sweet tooth, and he devoured these.

I'd love to see you try Cupcake Jemma's version of the Levan cookies from New York! Some of the recipes do have nuts but there are several that don't contain nuts at all. You can also order recipe kits from Jemma's website where everything is provided except fresh ingredients like butter and eggs.

If you can watch Alton Brown’s “Good Eats” episodes on chocolate chip cookies, he explains all of the science behind different ingredients and techniques to create and also control all kinds cookie experience. Example: baking powder vs soda, egg whites or whole eggs, and brown sugar /white sugar ratios to control crisp or chew. I loved it.

I have been making the Rock recipe for years though I usually just use all chocolate chips. Back in the day it was promoted as either neiman-marcus cookies or a mrs. fields dupe.

I just want to say that in my sea of deep depression (my son passes away, we lost his kids via no grandparents rights in the states and my beloved dog died the next day screw 2021!) you two bring in a ray of sunshine in my dark deep sea! To adjust the height of the attachment, there is a screw visible when you have the top of the machine tilted back which needs to be barely turned. I don't remember which way raises and drops the paddle closer to the bowl but it says in the Manuel.

The Rocks cookie is one I’ve been baking for decades. We called it the $1M Cookie. The story was someone went to a restaurant and wanted the recipe and they were billed $1M lol. Also, freezing the chocolate is great but if you break the bar and a half and make it twice as wide it goes a lot faster basically grating 2/2 at the same time

I've made eggnog cookies with eggnog icing, which had rum extract in it (not real rum). My 2 most favorite cookies I've ever made though are the blueberry cheesecake cookies, and banana cookies

There is a little silver screw, that you can adjust to drop the beater lower on your mixer. That’ll help reach the butter when there isn’t a lot of it in the mixer xx

It's ok Chris, some of us got that Rock wrestling reference you made 😂 Mythical Kitchen did a breakdown of what would make the best chocolate chip cookie and what they ended up with is what I agreed to before the start with the exception of they never used any vanilla extract. I am not sure if that was an oops or on purpose. I always use brown sugar in my cc cookies but never "only" brown sugar. It should have both regular granulated and light brown sugar for me. Using it on its own changes the composition and taste too much. The molasses that is added to an already sweet ingredient is too much to use alone for that type of cookie that also has chocolate in it. Have you tried making Pfeffernüsse cookies? They are heavily spiced and smell like Christmas for sure. I don't believe there are any nuts in them.

The 1st cookie recipe is the famous 'Neiman Marcus Cookie' or '$250 cookie recipe'. I used to make this for work in the early 2000s. There's a story that a woman called Neiman Marcus to request the recipe & they charged her $250 for it but thought they quoted $2.50 until she got her credit card bill & saw $250. Its apparently proven not true but regardless makes a great cookie.

For the Joanna Gains ones, you NEED to try adding toasted pecans and halved rolos.. and do a little less chocolate chips. I also really like to add a teaspoon or two of bourbon... life-changing!!
