Update: I've made rad na gai three times so far using your recipe with changes made appropriate for chicken. This is a great recipe. I'm now 10/10 on my rad na skill. I didn't realize it was so easy. Great dish. Greetings from Bangkok.

Pork Butt vs Pork shoulder Pork butt and pork shoulder both come from the shoulder of the pig. Pork butt (also called Boston Butt) comes from above the shoulder blades, while pork shoulder meat extends down to the pig’s front hoofs. Pork butt contains more fat and marbling, which makes it better suited to barbecue smoking. Just for your info Pai. Thanks for the recipe's I lived in Thailand for many many years. Your recipe's are the only ones I use for Thai food. All of them are exactly how I remember. Thanks again.

I used to have this dish every week at my fav Thai shop but now because of COVID.. I will learn to make it; tx for video, I am just not sure on how best to make the "Egg Crispy Noodles"; is it best to use a deep fryer or can you just immerse in oil in deep pan? Also whats best oil to use?

Outstanding dish Pai ! Thank you for sharing. You're so sweet, lovely, and fun. And your chef talent and teaching skills are A+ ! I found the Tao Jiew and fresh Ho Fun noodles at a large local Asian store, so I'll be making this dish a lot. Rad Na, Pad See Ew, and Pad Woon Sen are my go-to dishes I make at least twice per week. I also love your Drunken Noodles, Kao Moo Dang, Larbs, Adobo, curries, curry noodles, stir fries, and soups, and I enjoy trying out all your other dishes too to add to my favorites. I have you to thank for all of that. Thai food has always been my favorite, and because of you I can now make it all the time at home for a fraction of the price of going out. I have my own Thai restaurant in my kitchen !

Hi! From Pai "Use regular broccoli or kale so you still get the crunchy stems. Bok choy is good too, but it doesn't have crunchy stems." Cheers! Adam

Looks similar to “Wat Tan Hor “ from Malaysia, where they mix in an egg after turning heat off ! I will try this version, I’ll use chicken as I’ve no pork , plus they are similar in taste! Can you add chopped onions with the garlic at beginning? I find onions helps flavors!

Here in Malaysia we call it "Ladna". Next time i order i'll say it as "Rad Na" to sound more classy Some cook toast the noodle till it a little bit crunchy (ughh..i love it) and with eggs too

If you put the pork and stir fry it before adding water ingredients, you will have the thicken egg thing mixed in the sauce like the famous brand.. also use the hongkong flour.. which I think making from patato will get you the clear sauce.

Hello, I love all of your recipes. I am Japanese but lived in Thailand for a year and am now trying to cook all the good Thai food in Switzerland. I have a question regarding the rice noodle. Here in Switzerland it is very difficult to get wet type (fresh) rice noodle and I know you have a recipe to make own rice noodle which I do sometimes but a lot of times I am lazy...., then I buy often dried wide rice noodle, Taste is ok but it becomes very sticky when stirfrying them. Do you have any good tip for making not so sticky?

Hi! So Rad Na (also sometimes spelled Lad Na, but same thing) in my video is the standard kind you see in Thailand, sounds like the place you're talking about is doing their own modification on the classic. Nothing wrong with that as long as it's yummy!

Thai food we usually make khao soi since my mom is from northern Thailand and we eat sai ua sausages and mostly lots of vegetables. sometimes we cook green curry, jasmine rice hom mali, kra pao moo, stir fry morning glory, and kang som and more.
