Soft rotis made at home with a very detailed demonstration of each step from making the dough to rolling, cooking and applying ghee!
Ing:
2 cups wheat flour
1/2 cup wheat flour for dusting and rolling
1 cup and 2 tbsp lukewarm water
2 tbsp oil
pinch of salt (optional)
2 tbsp ghee for brushing on the rotis
Method:
Start by placing the flour in a big pan add salt if you want add the oil and massage a little then slowly add the water and bind dough, knead the dough for a good 5 min until the dough is nice and smooth. Cover and let the dough rest make the individual rounds cover with extra flour and let the dough rest for about 25 min. Take each round and flatten with rolling pin, heat a pan on the stove and bake the naan as illustrated in the video. Brush with ghee or clarified butter if desired. Enjoy!

Not everyone is blessed with the ability to teach effectively and there are many examples of that type of thing here on youtube, but you are one of the exceptions to that. I so appreciated feeling like I was standing right there with you in the kitchen getting a good look at the whole procedure. BTW, just as helpful was the person behind the camera as well!! Whoever they are, it is so wonderful to have sufficient closeups that are clear and well lit to understand all the intricacies of the different steps. You were right to call the recipe simple, but still take the time and effort necessary to thoroughly show us how to accomplish good results on our own. So often I want to shout at the camera person to go in closer to the "action" so that I can get a clear view of what exactly is happening!!! Thank you SO much, I am your newest subbie!!

Dear Raihana, thank you for your amazing recipes you are an expert, I must have tried making chapatti at least 50 times but still don't turn out like yours, however I will keep trying because I love Indian food. Also would like to add I saw your video where you and your husband fed the homeless people, then I read many negative comments, it broke my heart to see these comments, I just want you to know that I respect you and your husband for your kindness to those less fortunate, the world has changed so much, I still cant believe what is going on anymore. thank you for your humanity.

I am Indian and I’m brought up eating chapatis all my life. I’ve even tried it a few times myself but they turned out to be a disaster. They always turn out hard and stiff as a plate and mostly burnt!. Thank you soo much for this detailed video! I now have confidence to give it another go.

Never give up the more you practice the better you will get to it, the trick to getting them soft is to make sure they don’t stay in the pan for too long you only flip twice the second time press down gently and it will start bubbling, you might have a couple small or one large poof Hope this helps ☺️

Anne Lee. I love it!!! I have 2 boys & a girl & I bought each one a serrated plastic chef knife when they were 2. They all helped me chop n prep the food & those are my fondest memories of them. They are older now (12,14 & 16) & can cook simple dishes on their own! I want my boys to be able to feed themselves well in college & after! My husband is a great cook & I so appreciate his momma for taking the time to teach him (all 9 of her kids are awesome cooks!) 🥰

The secret to rots puffing up like a balloon is very easy, you do not overcook the first side and in fact do not wait for the small bubbles to appear, if they do then it won't puff up well, you place the roti on a very hot tawa just for a few seconds, I mean few seconds like 1,2,3,4,5,6,7,8 9 and 10. then immediately flip it over and allow this side to cook for a minute or so, flip over within 10 seconds is important, by this time its colour would have changed but before it starts to bubble up, any longer than about 10 seconds you will not achieve full puffing, then you cook well the second side, until you get those brown bumps, do not let bumps become too dark as you would be burning or overcooking this side, when it seems all the second side is cooked and you then flip it back to its first side, now it will balloon up mostly by itself, some people also place this side directly on cooker flames, this has a very rapid ballooning effect and cookes well , I prefer this way and it gives a slight burnt aroma, but if you kept it on the hot tawa, a light pressure from a cloth or your spatula may speed it up, this simple time trick works every time, but you must have rested the dough for at least 30 minutes to an hour after kneading, because if you start rolling immediately after kneading it will not balloon up well .

A perfect or even good roti must puff up every single time - no exceptions. You're right that if the first side is cooked too long the puffing up may not happen.

I have to disagree with cooking the first side, I wait for bubbles to appear before turning it over - it's probably the side I cook the longest, then turn over and cook for second side , then turn back to the first side and it soon begins to puff up !

Back again! The instructions were so very good! Even the rolling, which has been a problem during a handful of failed attempts interspersed over 5 years, went of very well based on your advice! Thank you so very much! It took me 1.5 hours for 6 rotis, but it will all get better with practice. The rotis were excellent! I feel empowered!

Ma’am, my wife and I watched how you made the Roti. You were amazing. My wife is from Bombay and, like you, has been doing rotis for a long time. I do too, but I’m not as good at it. Still, both of us watched your detailed explanation in admiration. We would say things like, “this lady must have been doing it for a long time’ and shortly after that hear you saying, “I’ve been doing this since I was 14”, we say, “definitely she is has learned a lot of tips from experienced mom or grandma” and you’d say about that... Thank you for your top class presentation. We liked it as well as got some useful pointers.

These days mothers n grandmothers don't have the authority, hold, etc on children. Learning time is painful. This difficult teaching only happen when someone wants to learn or the teaching mothers have a vision n persistence for the children. Now, app, order, n eat for modern times.

Thank you for sharing this. I learnt to make roti with my first partner - a Gujarati Indian - and developed what I called “chapatti fingers” (the ability to cope with the heat when turning and flipping the rotisserie in the pan) 😊. However, I never could get them very round and they didn’t stay very soft. I’m going to try your techniques. I LOVE roti, chapatti, parattha (sorry for spelling errors). I regularly cook curries for my family and would like to make better Indian flatbreads to serve with them. So, once again, thank you for sharing your skill. Really great teacher. If you're going to teach someone how to do something this is how you do it. I was really reluctant to spend over 30 mins learning a simple Indian staple but was I in for a surprise. Every minute of the instruction was relevant and delivered with such precision. This has to be the definitive method to the art of doing this. Having seen this once all that would be needed is a few minutes of a refresher if required. Thank you for your precious time spent doing this.

this is probably the best tutorial on KZbin sadly I can't get mine to rise I've tried several tutorials but they just end up flat and rubbery. I have found a use for the atta it makes great Irish soda bread so it wasn't a total waste of money and i use the tawa for making naan which I make perfect i think the roti is gonna be resigned to the history books for me ☺

I know it's been a while but try using a bit more water or cooking less time, also roll some out in different thicknesses, I used to roll mine too thin and they dry out sometimes, but if they are too thick they are rubbery.

I was married to an Indian woman for many years, she also started roti-making as a child - it is really an art form - a column of 20 or 30 rotis perfect in size and shape; this is the best tutorial on folding and rolling the dough as I ever had - that's the bit that gets the layered flat-bread and air-pockets to rise - it's much harder than it appears and I think the most important part - what a great tutorial...

Love roti but can make it I making it my flour were soft but any time put on the stove it ,do not come out right I have a friend tell me how to do it jut don't out thank for the video.

Thank you for explaining in English. I've been searching KZbin and all the other videos I found would say welcome to my channel then they switched to another language. So last night I made my first Chana Dal and fresh Roti. I used the non stick pan and then my toaster oven on High to puff them up. Everyone enjoyed it. Next time I'll make them larger. I cut them too small. Thanks

Wonderful tutorial Raihana, I'm really impressed. My mother taught me everything but forgot to teach me cooking roti.... I think all mothers should teach their daughters the skills they know. For us Indians, roti is must. I will definitely teach my daughter cooking. By the way really like your kitchen :)

I am very much impressed after seeing this video because right now I am in Riyadh, Saudi Arabia and fed up eating ready khubj and thought to prepare it rotis but my family members and friends here are advising that this is not a easy job and tried before watching this and I was totally frustruated because the wheat I got was brown and I was not able to make correct rough and then the total was not done properly if you can look at it you will laugh but after watching this video I got some how confidence that I can do it. Once I am successful definitely download video of success. Please pray for this. Thx

Lynn Bairefoot Tortillas is descended Pita bread which is from the same family as this flat bread called Roti.

For the softest rotis add 1tbsp of ghee ,I am Indian we HV been used eating roti whole day,anyways god bless miss u were fantastic
