When the flames are high and the meat is thick you move it on the outskirts to cook slower.higher temp is where the flames are. Plus you can thump of sprinkle water to calm the fire. It’s actually a good place to eat at but I think it’s 2 hours max that you can stay and eat it’s an all you can eat Korean bbq I went there on a date with my boyfriend and we did get full from it if you leave meat that you didn’t finish they charge you 12 dollars also for it
