We don't recommend oil based colours for meringue - the fatty oils in the colour will deflate the egg whites, thus it the meringue won't whip up! gel based colours are best for meringue 🌈

If you don't have 6 tins can you bake the first 3 and than bake the next 3 after?will the cake batter still be good? Or should you make a half mixture and than make the other half when the fist ones are done?

You can absolutely bake 3 and leave the batter to sit at room temp, then bake the next 3 after 🌈

Hi Jemma, I have a question. I live in a very hot and humid country. So when I take my cake out of the fridge after letting the crumbcoat set, it starts condencing which makes the next coat hard to stick. Also colors start bleeding as soon as the cake comes out of the fridge. How do I fix this?

I'm not Jemma, but I'm a baker and chemist. For frosting after the crumbcoat, you might want to try two things: either refrigerate more briefly or wait for the water droplets to evaporate. Water condenses on the surface because it's cold, so it should evaporate as the surface warms up. However, it might end up being the same as just frosting the cake directly after the crumbcoat! So you could try skipping the refrigeration. It works reasonably well - you just have to be a little more careful. As for the colors - your crumbcoat can be uncolored frosting so it doesn't bleed. If you are talking about after the cake is fully frosted and refrigerated, consider trying oil-based food coloring like Jemma shows in the video. They should have a harder time mixing with water and may not be effected by the water droplets. But if you still have this problem, just be aware that you don't need to refrigerate many types of cakes like this one. Swiss meringue buttercream can sit at room temperature for a few days safely.
