Ok, so now I am fan-girling, but... I was thinking that if I could only watch one cooking channel on KZbin forever it would be yours. It's just warm, real, funny, endearing. You know what...I am gonna get emotional here... I just made like 4 of your recipes (white bean/kale, risotto, Brussels sprouts, and ofc your brownies) for a dinner party last night and everyone was raving about how good the food was. Here I am finally having them all leave the house lol and I'm watching your next video already thinking about making these soups. All three of these soups look so good! Kabocha squash is one of my favorite foods ever. The skins of kabocha are edible, so after a recipe like this, I take the skins, toss them in a little oil and spices (I use salt and cinnamon) and throw them in the air fryer and they crisp up kind of like a potato skin. So delicious!

a tip for the bouquet garni: if you find your bay leaves cracking apart when you tie the twine, you can either leave them out of the bundle and fish them out of the soup later, or rehydrate them with a bit of water before tieing

I make the thai squash soup and it was 10/10 amazing. I got the lime leaves online from a farm in Texas that ships produce (ungassed) The leaves were amazing and so well packaged. I feel that they made the soup. The leaves keep in the freezer. Definitely make the peanut crunch for the toping, delicious

Mushroom stems and bits and pieces can be frozen for use in flavoring stock etc. Or you can dry them out and pulverize them in a spice grinder or blender. (Of course I know that the presenter knows this, my comment is intended for the young people watching at home.)

Hi, Nisha, I just became your fan recently and I really like how you utilize cooking skills, food and spices from different countries! I wanna recommend three nutrional ingredients that is used in Chinese cuisine , one is kelp, good source of minerals and can add an umami flavour to the soup; one is wood ear(黑木耳) , VERY VERY rich in iron, the monk always include them in their vegan diet; the last one is fried beancurd roll(響鈴卷), super tasty, super fast to made as it's aleady fried, and contains over 37% of protein. I think these three ingredients are not hard to find as they all comes in dried package (forgive my English, I mean they are all dry). Super good Mushroom soup, I make this all the time when I go for long bike rides. I just pop it in a thermos and take a slice of hearty bread. It is also great to add a bit of cooked wild rice and greens at the end of cooking.

Pro tip: If you have leftover lemon grass, don't throw it out. Put it in a jar of water. It roots very easily, and then you can transplant it into a pot. It will eventually send up more shoots and you'll have lots of FRESH lemon grass! When rooting the lemon grass you should change the water every other day or it will become stinky. Or maybe you like stinky water. Your choice really. Anyway, it's a way to get a little free lemon grass on down the road, and to not be wasteful. Lemon grass does grow quite tall, so you'll want to keep it in a well lit place, probably on the floor. If you give it a big enough pot and leave it to grow for long enough, you can actually end up with quite a lot of it. You will eventually need to harvest it all, but then you can take some and put it in a jar and start all over again. You can also do what I do and have staggered pots which will reach their maximum potential at different times. That way you can always have a supply on hand. If you get a really nice pot to put it in, lemon grass can be quite decorative as a floor plant in a living room or home office. Rotating the pot just slightly every day will ensure that the plant gets a little sun on all sides, and will result in your lemon grass plant growing straight and tall.

OMG! I am 1/3 into the video, but I already know what I'm going to cook tomorrow for the family! This mushroom soup looks SOOOOO AMAZING Nisha! I will replace the white miso with dark one (the only one that I have) and I will add the dried wild mushroom I picked last autumn and a home made cold pressed wallnut oil as a finishing touch, just becasue I have it fresh!

I just finished making the lentil soup in the Instant Pot. I used just one tablespoon of oil and I limited the salt, but it was still really flavorful, especially after adding the mustard and the vinegar. Also I only had 1 can of chopped tomatoes and a can of tomatoes with green chili's. So in they went! 😅 It's delicious, can't wait to eat it for dinner! Thank you for your recipes and videos. ALWAYS so flavorful!

Comment #2 on this video! I have now made all three and they were great! Today I made the Thai Basil and ironically, while I couldn’t find Thai basil locally, it was still terrific! I don’t use oil much so I used my go-to for replacement cashew butter which was kinda glunky but it still worked out. I did use a touch of avocado oil on the rims of the kobochis. I feel like this and the mushroom wet restaurant quality. The lentil was hearty and yummy. Thanks for your wonderful recipes!

I look at food as a fuel, so I sometimes lack imagination in cooking. Your videos have inspired me to get more creative in the kitchen! I lived in Kolkata (when it was still Calcutta) & Jamshedpur with my parents when I was a teen for 4 years. Meeting your family was a blast from the past for me! They are wonderful! I just made your creamy mushroom soup and it was a hit! I used enoki and cremini mushrooms and dried chantarelles since those were the only options at our grocery store. I love how I can change up the flavour by using different mushrooms. The herbs really add to the soup as well!
