Thank you Stephanie. I made these cookies and they turned out to be so easy and fast to make. However the taste is amazing. They are so tender and soft and the brown sugar adds a little bit chewiness to them. Really delicious. I used a combination of dark raisins and cranberries and I experimented with a piece of walnut in the centre of some of the cookies- really nice.

Instead of adding milk to loosen up the dough, try adding rum. I used Mount Gay. It raises these cookies from very good to superlative.

I was thinking of doing that and replacing the vanilla extract with rum extract just to kick it up yet another notch. I am glad it's been tried before! Trying to recreate the rum raisin ice cream experience for a loved one who especially loves that flavor.

thank you for the response. i tried the recipe using butter and it was excellent. my question today is about the accuracy of the measurements: my measurement here is 1cup=250ml, but when i use a weighing scale to arrive at 260g, i end up having to measure out more than 2cups to arrive at 260g. what am i doing wrong? which should i stick to?

1 cup of liquids ( for instance milk) weighs roughly 250 ml. Liquids are heavier than dry ingredients like flour which is measured in grams. One cup of flour is 130 grams on average. Better have a scale at hand to avoid confusion at least it helped me as Europe cups are different to USA cups

I have to say that I've followed many of these recipes and simply substituted the flour with 'gluten-free' flour (presuming it's readily available where you live?) and I've had very satisfactory and VERY tasty results! I've no idea about substituting for the Vegan options though! :)
