Karen is at it again. This time she made a delicious raspberry cream cheese coffee cake. Join us as Karen puts her hands to the task of creating a fantastic treat. Special thanks to Arron from Whatdoin? for sampling the finished product.
2 1/4 cups flour, 3/4 cup sugar, 3/4 cup margarine, 1/3 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp salt, 1 egg
3/4 cup sour cream, 1 tsp almond extract, 8 oz cream cheese, 1/4 cup sugar 1 egg, 3/4 cup raspberry, blueberry or backberry preserves.
Mix flour and sugar. Add cold margarine using pastry blender, reserve 1 cup of mixture. To the large mixture add baking soda, baking powder, salt, egg, sour cream and almond extract. Spread batter in greased spring form pan and up 2 inches in pan. Batter will be gooey, if you oil your fingers it will help. Mix cream cheese, sugar and egg until well blended. Pour over batter in pan. Spread preserves on top (you may microwave preserves slightly to made spreadable) then top with reserved crumbs. Bake 350 for 45 to 55 minutes till golden brown. Cool 15 minutes. Remove sides from pan. Slice in 12 slices. These slices freeze well.
