I know loads of takeaways doing the same. Its 2024, most retail businesses have card readers these days. There are very small fees for each transaction, negligible really but im guessing some prefer cash so its harder to keep track of what their income is. Easy to fiddle the figures.

When crushed chili peppers are added to the herbs and spice mix they are then, "Hot and Spicy Italian Meatballs". Lots of folks don't understand the difference between spicy and hot. Indian style butter chicken is spicy not hot. A dish can be spicy but It's not hot at all.
