Funny enough, Sans is actually holding back during this fight. Even if he uses the fullest extent of his power (unwise, seeing as though he lacks the proper physical energy to do so), Sans is using tactics that suggest he's more messing with the player than just outright trying to beat them. Sans knows he can't win, so he's not fighting for that cause. He's just trying to frustrate the player into giving up, what's called an indirect tactic within the Art of War (by Sun Tzu). Funny enough, the fact of the matter is, he's both serious here and his usual trickster self, since his fighting style reflects the latter side.

Fierce deity gaming Nope. Sans didn't just get this way over the course of the game. When he talks about timelines stopping and starting, he's referring to Flowey's timeline manipulation before the game started in addition to anything you may have done to the timeline. There's no way for him to know that Flowey even exists in this timeline, as Flowey warns you to stay away from him and not to let him know you exist. Flowey has been avoiding him for some time now, and he has been after the first several times Sans stopped him. Sans can't differentiate between anomalies if they overlap like Flowey and you do. So you could have caused none of those shifts he was talking about, but because he only knows that you exist and that you are capable of shifting the timeline, he assumes that it's you doing it.

But the question is: how would he know you can actually do it if you never do it? I thought of the same thing previously, because Flowey did play with timelines long before you, but without messing with the timelines even once you would just look like a powerful being that might be capable of destroying the world, but the jumping, starting and ending part would have nothing to do with you. Unless they can detect stuff outside the current world. But even then, it is theoretically possible to start with the genocide route and defeat Sans without ever saving, and I doubt that is taken into account separately anywhere.

I could imagine a no save pacifist run could take longer, as your low health can make it so even random encounters can catch you off guard, and there's more fights you'll want to commit to memory, just to be sure. Actually, I don't know if it's truly possible to do. After omega flowey, you are sent to the title and start up before asgore most times. But if you haven't saved? You can't reload there. Every time I see this fight, I marvel at the amazing game design. This thing has such an insane difficulty curve, but throws just enough at you for it to still be possible to beat it without taking any hits at all. On top of that, it tells you what's happening in ever-so-subtle ways just before it happens, almost like the game is saying, "You know what's coming, and you can't do anything about it!" I think that's a big reason why this fight is so rewarding to beat. You wanna smash its SMUG LITTLE FACE IN. Good job with your show-off. Good stuff.

Actually, kids learn quicker than adults. So they could probably learn the fight quite easily. But other things in undertale aren't for kids, they wouldn't get the story or fully appreciate the characters. And they wouldn't get the same weight from certain moments in the game, like the judgement hall.
