Most high quality acoustic guitars are made of solid wood sheets and finished with lacquer a lot of the time to show off the wood grain. Higher quality ones of laminate wood have a veneer of a nicer wood on the surface and are also lacquered to show off the veneer. Guitars like the one he "restored" are pure laminate wood and will have an opaque finish to hide that fact. Generally, acoustic guitars made of laminate don't sound as good as solid wood ones because the more breaks in the material, the less vibrations propagate. Think of it as the sound doesn't get to mature, resulting in muddled/dull notes as compared to higher quality guitars. Finally, you can see there was filler used to level out the faces of the guitar when he strips it. That will further reduce the quality of the sound produced as it's yet another thing for the vibrations to pass through with a different density/thickness. There are exceptions of course, but that'll give you a few basics.

Usually, stretching and such, as seen here in tech land is done on the bench. Those who actually know the perils of this very thing, pick the guitar up, place in lap, then tune up for the first time and stretch. You shouldn't set intonation until the string is actually stretched, this is why some setups, simply are lackluster. Not doing the stretching properly.

Actually, cyanoacrylate is reasonably commonly used as filler for cracks in woodturning and the like. And if it actually completely soaks into the noodles, that should be fine too. Ironically this is one of the things that could work out well with this "restoration".
