OMG... This is on my "to-do list", now! 😋 When I lived in GA many moons ago, we used to buy Brunswick Stew by the gallon from a coworker who made huge batches and sold it at work. It was amazing! Honestly, I can't recall if his version had lima beans or potatoes. I just recall it was deelishus, though I haven't had it in 25 years!

I’m from Louisiana and I don’t know who is saying it’s like gumbo, definitely not. No okra in Brunswick stew and no corn, potatoes, or BBQ sauce in gumbo. This does look delicious, and I appreciate how easy your videos are to follow. Thank you!

After retiring to Florida I've soooo been missing my all time favorite stew from my favorite family owned restaurant in Austell, GA. This is sooo close! It's yummy and I'm so happy! I made this. After canning, I had enough left over for dinner and then some.. It is so good!! My 23 year old son who hates “soup” absolutely loved it (I know it’s not soup, but to him it is, ha ha). He ate it 3 days in a row.. Thank you for the sharing the recipe and canning instructions..

I enjoyed watching. I’m from Ga and grew up on Greene county ga Brunswick stew from Holcombs in Greensboro. We only use corn snd tomatoes ground together. No potatoes or Lima beans. We use chicken and pork. .

I love your channel, Carter! I shared this vid with my sister, who made it yesterday. She mentioned it reminded her of an old family recipe my mom and great aunt in Troy, AL called "camp stew". But it had butter beans, green beans, three meats, and bottles of ketchup instead of bbq. No jalapeños, smoked paprika, or liquid smoke, but still a great flavor. Old versions of Brunswick stew probably didn't have those items either, but are huge flavor boosters. Mine is heating through on the stove and then I'll can it. Can't wait to try it with some good buttermilk cornbread!

I made this stew a month ago and just tried it for the first time today. I made a small roux with butter and flour to thicken it a little. It is delicious and I am so happy I made it. We like stew but it’s nice to have something a bit different. I was able to find some tomatillos yesterday and am prepping for tomorrow to make your canned chicken verde. I love your channel and your presentation is so easy to follow. I feel like you are in my kitchen. God Bless from Alberta ❤

New subsciber!!! I get brunswick stew from a place called Bubba and Frank's. I absolutely LOVE THIS STEW!!! That's the only place I've had it, other than trying a canned version from the grocery store, and it wasn't even comparable. I've search different recipes and yours is the only one that looks as good as the one at the restaurant. I hope to try it soon!

I’m on day 3 (bbq sauce & chutney we’re days 1&2) and I just popped your chili into my brand new digital canner! I also have chopped up a roasted chicken & set it into the refrigerator, and I’ve got 9 lbs of pork shoulder in my Dutch Oven that have another 4 hours to go. I do have all of the ingredients for Brunswick Stew and I’m hoping to put that into the canner tomorrow.

@@growandpreserveoh my goodness! I’m preparing a 2nd round in the canner and I cannot believe “I” made this! It is so delicious!!!! I used just one quart of chicken stock, and it’s wonderfully thick like baked beans. I think it’s better than baked beans! (For me this is a huge compliment, because I’d eat baked beans or pork beans cold right out of a can! I also made my first pulled pork in my Dutch oven last night to prepare for this recipe, and I made your bbq sauce 3 days ago also to put into this recipe! Mmm so good! I am sorry I missed the meat instructions, is all of the meat cooked before putting it in the jars or not? This will be my first attempt to can soups with meat included. Now I need to purchase a pressure canner. I have always used a cold water pack canner. Love your videos!!

My grandma never put potatoes in her stew. She used corn and tomatoes. Now for the meat we would use chicken and pork or rabbit and pork. Good stuff

What times supper? Ill be early. I lived with this girl in Tennessee. They had a bbq place and looked at me crazy when i asked for Brunswick stew. They had no idea. I made her some and the kids. My grandma made Brunswick stew when I was a little girl. She didn't use potatoes but she did use lima beans. She also used pork and chicken. It was delicious.

I absolutely love this recipe. Your BBQ sauce is a must for this! My Mom and Hubby are brunswick stew eaters, year round. Me not so much because I was never sure what meat was used in it, right?? This really is the best stew I have had in regards to flavor, texture, and the ingredients are clean, not alot of "things", including butter beans LOL Thanks Carter for posting your recipe. Although I live in Brunswick now, it is so different than the Atanta kind of stew. This recipe lies somewhere in between, in a great way! And to be able to pressure can it, well.... I made it to heaven! Luckily I had some left over...wink wink, and hubby really approves! TY

Follow Georgian here. My recipe is very similar, except I cook my meats on my smoker (actually freeze my leftover meats…pork butt, chicken and beef brisket.) Have always made large batches and froze it. Will try pressure canning it. Great video! Have to watch your BBQ sauce recipe now!!

Made the BBQ sauce today and smoked a pork butt. My husband thanks you for sharing that BBQ sauce recipe. It is so delicious. I'll be making the brunswick stew tomorrow and I'm going to follow the rules and not add butter beans but only because I trust you. I've always added butter beans, my husband who is from GA, has always said no . . don't do it. So he's soon going to be your biggest fan. :)

I am from Brunswick, Ga. My mother made it all my life and did add green butter beans. I have tried many versions of the stew and have made it for my family. We always preferred it with green limas and made it with fresh corn. I must say that my Mother's Brunswick stew was the best I have ever eaten. Just adding beans does not prevent it from being Brunswick Stew. I know more people who do use beans than people who do not.

I’m from NC, here’s my family recipe. It’s over 150 years old. Written in our family bible by my great x 7 grandmother and made every fall to be canned for the winter. It’s been modified to incorporate modern ingredients and home canned vegetables in quarts. Brunswick Stew 2lb meat (can use chicken, turkey, venison, squirrel, rabbit) 1qt green beans 5 med onion chopped 2lb potatoes cubed 2 sticks butter 1qt canned stewed tomatoes 2qt canned corn 1 bottle chili sauce (I use Heinz for convenience) 2tsp Texas Pete or Tabasco (more if you like spicy) 2qt baby Lima beans 3qt chicken stock 4tbsp Worcestershire sauce Boil and debone meat. I use a rotisserie chicken from the store to save time if I don’t have venison or rabbit. Leftover turkey from Thanksgiving works great. Sweat the onions in the butter in a large pot. After they soften, about 5 minutes, add everything except the potatoes. Cook on med heat an hour covered. Add potatoes, remove from heat and it’s ready to can in quart mason jars. Add more Texas Pete/Tabasco if you like spicier. I would try it like the recipe says first time. The original recipe used rabbit, squirrel, venison, pork, chicken or turkey. Pretty much any meat, so do that if you have a hunter around.

Glad you like it, Bonnie! I have not canned barley. We don't eat many grains, so when I do splurge, I like the texture to be more on the al dente side. My guess is that barley would likely be quite mushy after canning.

I was born and raised in Columbus, Georgia and my family has been there since 1827. Never in my life have I been served Brunswick stew with potatoes in it and most stews contain corn, baby lima beans, and green peas.

I love soups and stews of any kind. I do love it. Im sure your brunswick stew is good. But North eastern Brunswick stew is the very best to me. I do think its the way it is cooked. What I saw here is you put your tomatoes is at the beggining and I have learned with all the acid it keeps the other veggies from cooking apart and with the length of time and heat you added the corn way to early. Corn does not take very much cooking before it becomes hard and dry. Not using yellow corn but white corn is sweeter. Like i said it is as many diffrent was as it is cooks and im sure your is good. Just some things I have found threw the 50 + years I have been cooking brunswick stew. Maybe give it a try. I add tomatoes nect to last after my other veggies start comig apart and only add the white corn when it is done as the hot srew will finish cooking the corn. Turn off the fire then add corn.

NC girl here, born & raised. We've done stews in a 10-gallon cast iron pot in the back yard, but I am going to do this for my personal stash. Yes to potatoes, yes to lima beans (in a small amount) and defintely no to okra. Your recipe is just about like ours and our friends have said it's the best they've ever eaten and there are a number of stew "fundraisers" in our community. One question, why aren't you using your home-canned broth and tomatoes instead of boxed and canned?

I'll give you a pass on the lima beans because you said no to okra! ;-) If I were going to make a batch of stew fresh for dinner, I would definitely use my home canned tomatoes and broth. But when it comes to re-canning, I feel like I'm cutting myself short on the effort that went into the home canned tomatoes and broth. Sounds a bit silly when I type it out! But there you have it!

I’m definitely going to try this. I like to raw pack meals in a jar. Have you ever tried to raw pack this? I was thinking of trying it. Since meat comes out of the jar so tender, I’d just break it up in the pan before serving it. You are much more experienced at canning than I am. Do you foresee any problems with raw packing it? I haven't raw packed this one. Two things you might want to think about: You may want to soak the potato dices in a cold, heavily salted water bath for at least an hour to help release some of the starch that could turn your stew to glue. 😏 Second, raw packing pork butt releases a lot of grease that may impact your final product. You could certainly just use cooked pork, even in a raw pack product. If you try it, please let me know how it goes!

That's exactly what Brunswick stew is. At least in S. Georgia. Im not a fan of the S, Carolina mush over rice. As a kid our neighbors made it with random wild game, people loved it.

Brunswick stew is traditionally a refrigerator soup anything can go in it the only thing that is crucial in Brunswick stew is you use more than one meat chicken beef pork but you don't have to you can use wild game too. We made it every year growing up at my aunt's house no potatoes went in it we used I liked lima beans my uncle didn't I don't like much corn in mine it's sweetens it too much so anything can go in Brunswick stew don't let anyone tell you

Sconyers hash is definitely good, although a bit bland. Definitely needs a little spice. Not Brunswick stew by any means. Absolutely have to try Sconyers if you’ve never been, for the history, if nothing else. Eisenhower’s favorite place to eat when he was visiting Ft. Gordon.

If you click "see more" in the description you will find it. Here it is just in case. Here's the recipe. It makes 16 pints or 8 Quarts. Remember that by the time you put the stew in the jars, the potatoes are not yet cooked. If you plan to have some that hasn't been canned, you'll need to cook it for another 30-60 minutes until the potatoes are done. Carter's Real Brunswick Stew: 4lbs cooked, pulled pork 2lbs cooked, shredded chicken breast (canned is fine) 1 1/2 medium onions, diced 4-5 large cloves garlic, diced 2 jalapenos, diced (seeded or not) 2 medium russet potatoes, peeled, diced, blanched for 3 min and rinsed. 16oz corn, frozen or fresh 1 1/2 pints BBQ sauce 2 quarts chicken stock 28oz can crushed tomatoes 14 oz can diced tomatoes 1T liquid smoke 1/2cup Worcestershire Sauce 8oz tomato paste 1/2 tsp black pepper 2 tsp salt 2 tsp smoked paprika Saute onions, garlic and jalapenos in a light oil while the potatoes are blanching. Then add all of the ingredients to the stock pot. Bring to boil, reduce to simmer for about 10 min. Ladle stew into jars, leaving 1" head space. Pressure can pints for 75 min or quarts for 90 minutes at the appropriate pressure for your altitude.@@elaineweitz2595

The first one documented in history was made in Virginia during a survey expedition prior to the revolution. It did not have pork or chicken in it. It had deer and squirrel. You should redo your title to say, georgias altered modern version of imitation beef stew. They didn’t have w sauce or bbq sauce then. I’ve had many versions from many places. No one makes the original version. Not even people in Virginia. They are all tasty. Don’t understand why so many in so many places call there’s the real recipe,when none of them know the original recipe from colonial times.

@@Taking_Back_Thyme I'm not sure, Thyme. The only think I can think of is the structure of chicken tenders. The muscle part on each side of the tendon is quite short. As it separates easily from the tendon, you would end up with a very short fiber. I have always used chicken breasts, and I cut them into 1 1/2 to 2 inch pieces, which gives me more substantial shreds.
