Dude, she ain't joking. I moved to Texas about 3 years ago, and hands down turkey is traditionally my least favorite mainstream meat. Because of this, it took me over 2 years to try smoked turkey here in Texas just because I knew I didn't like turkey. Then I was given a sample and my mind was blown. It's flavorful and freaking delicious. It's now my favorite barbecue meat here. Better than brisket or ribs. No joke.

I smoke a whole turkey every year for Thanksgiving that I brine overnight and then smoke with mesquite chips. The first year I did this everyone wanted to take some home with them.

@@cristopherfrakes1416 I've got one if it helps. Dilute salt, sugar and the magic ingredient - a bit of baking bicarbonate soda - it tenderizes the meat. In water. Steep the bird. Bingo. Even for just an afternoon will make a huge difference .

I agree, I went to a BBQ restaurant and they handed out small samples of both Beef Brisket and Smoked Turkey, the brisket is okay, but when I tried the turkey and it is so lean and delicious that I changed my brisket sandwich order for a turkey one

I always smoke turkey breast when doing a brisket or ribs. I slice what is leftover, vacuum seal it and put it in the freezer. It's just great to have on-hand for sandwiches, bbq cravings, etc.

That smoked turkey looks amazing, I feel like so many BBQ joints here in Texas focus too much on their brisket and neglect their turkey (at least the BBQ joints around Houston). A juicy, smoked turkey is something I'm always searching for. I can make it at home, but sometimes that smoke turkey craving just hits you and it would be nice to simply go buy some.

I love tony chacheries seasoning on my smoked turkey. I have smoked one every Thanksgiving for like 8 yrs now, and I smoke one or two through the year from time to time just because I like it.

I use Tony’s as well and been smoking whole spatchcocked turkey’s for many years. I use chicken stock, Tony’s and melted butter and inject it. No need to brine, always turns out moist.

Pull it at 160, and let rest for 15 min to finish cooking. Will be super moist . In the vid it was 168 on the grill which could be 175 after resting.

Was going to post the same…not moister than an oyster when pulling at 165°. 165° is for instant bacteria death…there’s a chart out there for temps + time and how they correlate. Cured for 7 days prior is also very nice

Spritzing is what keeps it moist. Creates a thin layer that keep moisture in because the sugars are caramelised.

Would recommend pulling the skin off, wrap with butter at 145, and pull no later than 155° because carry over cooking will bring it up atleast another 5-10°

This is a great walkthrough, my only suggestion will be to pull it earlier. Turkey breast of that size will rise 10 to 15° in carryover cooking. So pull it at 150 to 155. Cover it while resting to trap that steam, and it should hit 165 at its highest.

Tried some smoked turkey at the Loco Coyote in Glen Rose, TX. Absolutely delicious. I dont know what part of Texas you're in, but if you're anywhere near Glen Rose, i highly recommend The Loco Coyote. Such a fun place. Gonna have to hunt to find it, it's not main stream, but it's definitely worth it.

I am a turkey person and when I visited Texas, which was 50% just to have BBQ, I was always mixing it up throwing some turkey in there. It was heavenly. I think it's way easier to eat a few slices of turkey than brisket, just not as heavy I guess. I miss good BBQ...

I would highly recommend taking the breast off at 155 instead of 165…as long as any temp above 155 is held for longer than a minute it has the same pasteurization level as poultry cooked to 165 (which kills bacteria instantly)

I found one. Unfortunately I can't eat red meat or beef due to a medical condition. My options are chicken, pork, fish, or turkey. Here in town is a smoke house that sells mostly birria taco items, sausages and ribs. Though they don't sell chicken or turkey. They don't even know if the sausage is pork or not. I'm going to have to try this though, looks incredible

Pull at 158, place it in a aluminum pan cover in foil and wrap in towel let rest for .5hr and it will carry over cook to perfection

Looks great. I'd pull it at 160F or maybe even 155F. As long as it holds the temp long enough during rest it will pasteurize and be safe to eat.

155-157 for me. I believe that the USDA states that as long as it’s at or above 150 for 5 minutes that is considered fully safe

@JayMaCpdx yea ive known that trick for awhile. Although for that I still think butter taste better and they both get a good crust. But another thing I use mayo in is sauces. When I make Buffalo sauce I throw in a couple tablespoons of mayo in it at the end when it cools down and it makes the sauce creamy and thick without impacting the taste. I feel like butter and ranch change the flavor but mayo doesn't as much.
