I love this soup and I’ve made it a number of times. I’m not a big fan of chicken so instead I added lentils (precooked) and it turned out so good. It didn’t change the flavor and it’s rich and cheesy and full of protein.

I sometimes use a masa/water slurry to thicken chili or taco flavored soups. It was really good in a meatless chili I made recently with a little lime added at the end. 😁

I know you don’t typically buy corn tortillas but for those that do you can cut up 1 or 2 & use instead of masa (not adding additional salt as with chips). They dissolve & thicken soups just like using masa. Can’t wait to try this recipe!!! I love soups

It's fun figuring out meals based on what you already have at home! It can get really creative.... of course, not all creations work out and if someone makes a bunch of substitutions and then the recipe doesn't work, they shouldn't blame the recipe itself. But it's really fun when it does work!

I had a package of thin sliced ham for sandwiches in the freezer from this summer when the grandkids didn’t eat as much as I planned. I used it in a ham and potato chowder and it was delicious! I love using up things I have, I feel so good about not wasting them 😁

Boy I felt sorry for you when you tried the soup. I know how it is to burn my mouth and tongue. I've only had Velveeta a couple of times but I buy the generic version it's cheaper may not be better but sometimes money dictates what you buy. Don't apologize for making changes to recipes sometimes you might not have exact food items. Just like you used the tortilla chips. Very Smart. Love watching. Have a wonderful day.

I just made the soup with what I had on hand. I did add black beans and corn (excellent suggestion) and I used green chili enchilada sauce. If I had some sour cream it would be like sour cream chicken enchiladas in a bowl!

Another incredible SoupTober episode! Also...I LOVE when you wing it and make things with what you've got! For people who have anxiety about following instructions (like my ADHD butt 😂), it shows that changing things doesn't mean it won't still be amazingly delicious and it has helped me to not be so anxious in the kitchen (I'm not the best cook lol). ❤❤

@angelaschaefer5883 There are tons! I saute 1 onion, 2 celery sticks and 3-6 carrots (I like carrots in every bite). Add lentils and water or broth and simmer. Easy peasy. Freezes beautifully. Add rice, potato, sweet potato, oats, other veggies too. I

This is one of my favorite soups!!! I make it at least four times a year. If you like comfort soup, THIS is the one!!! You can sub all over the place with this recipe, and you'll be on point. One time, I put cornmeal through the Ninja. Another time, I added some canned frijoles with the last of the bag of masa. I prefer the green enchilada sauce over the red. One time, I had none of either, so ground up some canned tomitillos. Thank you for a good video, and for just being you. 🎉

Wow- that looks sooo yummy! I rarely try soups at restaurants either (except Olive Garden, lol), so I never would have thought to try this without hearing that someone else really liked it! I can see where adding corn, black beans, and/or rice would bulk it up and make it stretch further... and if you got tired of it as soup before eating it all😆, I bet it would be great cooked longer to thicken it then using it either as a dip or taco filling! 😍Thanks so much for the great recipes, and I hope your burnt tongue and lips healed fast!! 😊

Hello Rebecca Mike and my fellow Oc-Toblerones. if you don't have masa (which is the dough you use to make Corn Tortillas You can indeed use tortilla chips but also Masa Harina (the corn flour they sell to make tortillas), It's a good place to use up stale corn tortillas (soak and blend) or just corn would work. (yellow or white (hominy)) Velveeta (I discovered in my overspent youth) is just a yellow cheese sauce, in a brick form. if you make a flour butter cheese sauce you/ve got a tasty substitute. (and you can use any cheese you have on hand, a great way to get rid of bibs and bobs of leftover cheese) Of course with this particular soup of you have any leftover enchiliadas (tortillas soaked in a red or green sauce) you can remove the filling, blend up the tortillas, a great way to use up and extend leftovers) Thanks everyone, all the best Jacques Mexico
