You inspired me to cook extra for my elderly next door neighbor. It’s not how you do a full week, but when I’m making something, I’ll text her and ask if she wants some (and she always does), and I’ll pass her a couple portions over our fence or go over and visit when I deliver. I believe it has made both our lives better. She has been checking in on me after the death of my 13 yo dog and sharing her dog with me. So thank you for the inspiration. You’re doing good work.

I am sure that the meals you are making for your friend will be a big help to her. I have health issues and cooking can be hard for me. When I have a good day I make several meals for days when I am not up to cooking. I also take advantage of Community frozen pickup meals for Seniors through a Department on Aging Not-for-profit agency. Five meals, along with cartons of low fat milk, crackers, individual containers of fruit and graham crackers. The meals are not always the best, but I still find them helpful when I am not able to cook. Another good idea to help a Senior or disabled person is to offer to pickup and deliver the meals to them as many no longer drive.

I am so happy “our” senior is home and safe. My only dilemma is which of these recipes. I’m going to try for myself first.. I meal prep for myself some weekends. I love these particular recipes because they’re small enough batches that I can handle them and I’m not eating the same thing for a month. 😁. My belief is that (within reason, of course) the more I am able to save, the more I can give. The best gifts are always from the heart, but when there are material costs it just makes sense to take advantage of sales, etc.❤

I think budget restraints are a must when you’re doing the cooking for community series. You budget your own meals so why not budget those? I understand splurging on certain items for yourself as well as the lady you’re cooking for. Food in general is so incredibly expensive and anywhere you can cut a corner…do it!!! I know it might not be available to everyone but buying garlic in bulk and chopping it in the food processor or blender then freezing it in containers and taking it out as I need has really helped with my efficiency. You would think something like garlic doesn’t take a lot of time but having it ready to go helps so much time and energy wise

Charity most definitely does not have to be costly. I'm really glad you put that out there because I think a lot of people don't realize that charitable acts can still fit within a tight budget. I think a lot of people think that in order to bless someone else, the cost needs to be exorbitant, and that keeps a lot of people from even attempting charitable acts.

Rebecca you are truly a lifesaver! Although I am now 58 … I became a non able bodied retired nurse at age 38… so twenty years now. Both hubby & myself are on SSD …so limited income with HUGE PROPERTY TAXES as well as in need of a new roof. SAY SOME PRAYERS FOR ME PLEASE .My Hubby would do All Repairs , and fixed EVERYTHING house, car,home ,electronic related. Since he has health problems ( as well a neurological issues ) He can no longer do most things he used to accomplish ( for us as well as his parents & aunt/uncle that lived close by. We Are now the ELDERS LOL. MY family is in another state & most of my family are now deceased. Nobody bothers with anyone any longer . sad. THANK YOU FOR YOUR SERIES. I do not own a car plus in pain a good portion of the time. It is hard to cook, shop etc. I am actually thinking about seeing if We can get meals on wheels . Plenty of days I do not want to eat but have to for my health. Ty for your generosity with your recipes 👍🏽🌻💜🙏🏽

Thank you for these videos! They're fun to watch, but also, so practical. Someone I knew was recently in a crisis (which was eventually averted), and when I was trying to figure out what I might be able to do to help her, I thought of this video series and decided I would offer to make her food. Even though it was ultimately unnecessary, just knowing I had these videos as a resource was very inspiring. I will continue to keep them in mind in case another opportunity arises. (Or, I might just make the meals for my husband and me - they look so tasty!) As a side note, it never ceases to amaze me that I, with my ADHD and everything, can sit here and watch a 35-minute video like this one without clicking away. But that is a testament to your ability to engage an audience and edit a video well 😉 Kudos!

To thicken up your soup you can add a bit of the dry instant mashed potatoes. I like using that better than a corn starch slurry or anything else. Also I really enjoy watching your channel and I’m so happy that your lady is back home!

I made some quesadillas last night that be a good recipe for you! Took a block of cream cheese and mixed in half a pack of fajita seasoning and diced red pepper. Shredded some cheese and cooked some taco meat. Spread a little of the cream cheese mixture onto the tortillas, a small bit of the cheese, meat and more cheese then just folded them in half and browned them on the stove. It was super easy and made about 10 quesadillas. I personally find quesadillas reheat well too.

I love this video, thanks doing it. I really love the mixed berry muffin mix. My grandpa needed help with meals when he was 96 so I cooked for him. He loved chicken fried steak and ate it twice a day, with mashed potatoes and corn. I asked his doctor if that was okay and he said the man is 96 he can have what he wants. He passed at 99 and I still make chicken fried steak just not as often. Haha

HI Rebecca When I was in my teens, I would help to deliver meals to seniors, the sick/disabled being on these drives, it was great to help these souls. Sometimes a little hard on your heart, because their family either had passed on, or moved away,and they were alone but to see these souls light up, when you showed up ,really got to me, my heart and it was a pleasure to help them out, even though it could be a little emotional at times. I will never forget their smiles when you came to their door so happy to see ya. I just love these videos. Youve inspired me to do meals for my brother's group home. I cant do a whole week at a time but I can do one or two a month to give the guys a little variety and help give the staff a break from cooking once in awhile. It diesnt have to be anything fancy, in fact their favorite so far is individual charcuterie boxes. They love it. Just an idea for you, if your family has an oven or toaster oven. Ive put some of the meals in little metal baking pans. They usually only have to set the oven to 350 and heat for 10 ir 15 minutes. It makes the food taste more fresh cooked and the cheese can get browned. It just depends on the meal. Keep up the great job! You are not only helping your family, but inspiring others to do the same. Thanks!!

Not only is it wonderful that "our senior" "Shirley" is home, and that you are cooking for her and her grandson again, but by posting what you spent, it illuminates one other factor: if you are spending 85.00 a week for her, then a month is 340.00 - still within the spirit of frugality as well as charity/community outreach. That is a fantastic grocery bill for fully home cooked meals!

What a generous thing to do! A couple of possible time savers for the chicken pot pie soup: to separate the celery, the end can be cut off, to automatically separate all the stalks. Instead of cutting up raw chicken, an option would be to buy a chub of ground chicken or turkey. Thanks for your video!

My go-to omelet when I don't have sausage has to be the "Bacon Chicken Omelet." It's made with chicken fajita meat, onions, bell peppers, bacon, eggs, and sharp cheddar cheese. My family absolutely loves it, and it's perfect for meal prep. Sometimes I even throw in some leftover hash browns to give it a Spanish Frittata twist!

I used to make chicken over potatoes and carrots, but was getting chest pain (angina) from the animal fat in my diet. Now, I toss the potatoes and carrots in a bowl with olive oil and herbs (no salt), and pour them into their own roasting pan. I bake the chicken in another pan. The carrots and potatoes are tasty and safer tossed in olive oil, and I still can enjoy them with the chicken. I love sprinkling McCormick's poultry seasoning over the chicken. (McCormick's only - it's the best!) I recently had a stroke, despite years of working to minimize my consumption of animal fats, but it wasn't enough. So I urge anyone to do what they can to minimize that over the course of their lifetime, to avoid build up of animal fat in the arteries.

I have been following your channel for a while now and it is one of the only channels that I watch for the content to drop. I’m happy that you are able to meal prep for community again. I enjoyed the $100 monthly challenge as well. I have been meal prepping for family and friends for a few years, not consistently every week though. I mostly prep dinners for people who don’t like to cook for themselves. It start d when my mother in law lost her husband and had to cook only for herself. I found out she was buying the frozen “TV dinners” from the grocery store and I was like, oh no I’m going to make home cooked meals for her. My daughter says “service” is my love language. I do volunteer to help others a lot, so we have that in common. Keep doing what you do as long as it brings you joy. As for my inlet flavors, I like to make spinach with mushrooms and onions either as an egg bake or quiche.

I am a senior living by myself in Alberta, Canada. Our prices are much higher than yours but this video has inspired me to shop and prep this weekend for next week. I can half the quantities for some recipes, freeze a few dishes for later and enjoy a "no cook" week.

I wonder if you cut some onion or peppers after you finished cutting the ham in the chopper of it would help get the stuck pieces through because it looked like it cut the ham nice and even, but i wonder if the stuck pieces were hard to clean after. When I make a cream soup I will use evaporated milk for the cream. It doesn't water down the broth you've worked hard on and it's shelf stable. Or I use cream 😊 whatever I have available. My stock bag gets garlic peels *if* I crush the garlic then pull of the peel, otherwise there is almost no flavor benefit. Anything except cruciferous veg goes in; stems of spinach, chard, parsley, asparagus ends, turnip or parsnip bits along with the trimming from carrots, celery and onion. I'd heard that cabbage can instill a bitter taste which is the only reason I leave it out.

This is incredibly generous of you, and thank you for showing us how you get it all done. Amazing! Despite a lifetime of trying to avoid animal fats a fair amount, I recently had a stroke. Now I'm even more vigilant, for stroke and heart attack prevention. I urge you to saute everything in olive oil or other plant oil, only. Maybe add a teaspoon, not a tablespoon, of butter, or not. And to grease baking pans with canola oil or similar, not butter. And to dramatically reduce or eliminate cheese, butter, eggs, and any milk with a higher fat content than non-fat, and to use very low-fat cheeses, and to use only ground sirloin (not higher fat contents of beef) to have the least amount of saturated fat in the beef. Half of Americans have heart disease, and meals high in animal fats are the #1 culprit. Options are: beans, tofu, full-fat soymilk, olive oil, avocadoes, olives, nuts, nut butters, granola with nuts, Great Grains cereal (which has lots of fat and protein from plants), pesto, hummus, guacamole, ground turkey and chicken, 100% whole grains. And the best of all: OAT BRAN! Oat bran has twice the heart-health fiber per cup as oatmeal. Oatmeal is powerful for clearing out the arteries. 1/2 cup of oatbran per day is the single most powerful food for reducing cardiac risk, second only to taking a statin drug. So having oatbran as part of a heart-healthy breakfast is an important start. Examples of heart-healthy breakfasts: banana, oj, frozen strawberry smoothie glass of tomato juice or green juice 1/2 c. oatbran, simmered 2 minutes with 1 diced apple, 2 handfuls of walnuts, and a handful of raiins or dried fruit 2 slices whole wheat toast or 2 brown rice cakes with almond butter or peanut butter Or, the same, but instead of the toast and nut butter, add in 2 bowls of Great Grains with full-fat soymilk, in addition to the oat bran. Lunches: 2 sandwiches on 100% whole grain bread fruit veg Dinner: 100% whole grain pasta tomato sauce with ground sirloin light shake of parmesan green salad with vinaigrette dressing: 1/2 c olive oil 1/2 c red wine vinegar 1 clove garlic, sliced part way through to release the juices 1 t dried (not fresh) basil Dessert: Homemade brownies with walnuts or almonds, made with canola oil instead of butter, and cocoa powder.

Time saving tip! I use the coffee maker to “boil” my water for my instant potatoes. My coffee maker is way quicker than on my stove

I have been making 3-5 meals at a time and love having them on hand. I mark them with the date made and when hungry just grab one from the fridge to microwave. Saves lots of time and money. I started doing it after seeing you making these meals. Thank you
