Those leaks will definitely continue, the very reason that tapet cover gasket is leaking is because of the excess RTV you put in, just a dab of the edge of the half moon near the oil pressure sensor and corners, then torque it down to 10Nm. Also you dont have to remove the spark plugs when cleaning they literally seal 100+ psi combustion pressure and little water isnt going in there. Also I have to know man I am also looking for a Mk1 gofie body in good condition especially the paint and necessities like dash and seats good the engine or other mechanical componentslike suspension can be absolute scrap I dont care. Not trying to be a intermechanet or anything just absolutely love the Mk1-3 chassis and have dedicated into building and knowing absolutely everything about the VAG

Trick libricate the triggers once a month, i drove several MK1 ‘s and 2’s i never had any issues with the door handles. Secondly remove that cone filter and find a flat pan preferably K&N/BMC air filter or any high performance air filters using the original air box. Drill the bottom part of the airbox on the side away from the engine… remember that you want to suck in cold air into the air intake for better power , hot air will compromise performance . You’ll still have nice tone!

I saw someone take out the handle and spray the inner latch with WD40, then to put the handle back, maybe it might solve your handle issue
