Brian, thank you for testing and sharing your recipes. I’ll definitely give this a try. Separately, I’m wondering if you still have and/or use the Ninja Air Fryer. I noted on Chef AJ you said the oven worked best for roasted potatoes. I’ve actually been talking myself out of buying an air fryer for months (not to mention I don’t have any remaining counter space). Dolores

Steel cut oats are oat groats that are roasted, and could be used in place of the oat groats, or use 1 or 2 cups cooked brown rice to make a complete protein (beans and rice).

I made this in the instant pot today and it was very good! I used the sauté mode to cook the onion and garlic first then added all the other ingredients and cooked for 25 minutes. It turned out perfect!

I keep chili in my fridge all the time. Absolutely love it. It's so versatile. I'll use it over potatoes and steamed veggies for a quick meal but love it as a salad dressing, about the same way you use your smokey hummus, just mexican style. As someone else said, I also use bulgur or I'll use farro for that chewiness texture. Definitely gonna try this recipe. Love y'all's vids!

Great “meaty” chili! I topped it with some leftover cheeze sauce (the one with the butternut squash base...that was in your 4 cheese sauce video). Amazing combo.!

This looks delicious! Doesn't seem weird at all. Cocoa powder is an ingredient in mole and I often use a touch of cocoa powder and/or a splash of strong coffee into my chili. Also, adding grains or something to bulk up your chili is a great idea. Lots of folks I know use a bit of masa to bulk up their chili and thicken it, I usually throw a small handful of TVP into my chili to give it some little chewy bits as well. I'm not familiar with oat groats, but I do have steel cut oats in my pantry basically at all times.

I made this with carob powder. I really like it. I cooked the oat groats separately as I soaked them first and cooked 1c in 1-2/3c. Water. In the instant pot and cooked it for 22 mins NR I sautéed the onion and garlic and used the instant pot again with the other ingredients for 1 min. NR. You are a great cook,THANK-YOU SO MUCH.

So good!! I made a pot last night but used spelt berries (like whole wheat) because that's all I had but yum yum yum. Super tasty and the cooked whole grain gave a chewy meaty texture.

Hi there Jessica and Brian! I made your Chili and I agree that it is great tasting. I added a couple of things. I only had one can of Kidney beans, so I used one can of Garbanzo bean, which I love and used in my chili. And I add a Pasilla pepper, diced, which also goes in my chili! The Groats is one thing I'd never heard of! Thanks for you recipes and your Positive thoughts!🌺

Oat groats are a little specialised but in our local organic supermarket we have a section where you can buy grains which you can mill in the shop I just buy them without milling them rinse them and use the Jaroudi method for cooking. a nice alternative to rice or wheat groats or bulgar wheat.

We made this yesterday. Was wonderful. We switched everything over to a crock pot and cooked it until the groats tenderized. We might experiment with additional spices next time but that's always personal preference anyway.

Clearly, chili inspires a lot of passion and for GOOD reason. I have organized an "official" chili cook-off where I work since 2006. The varieties and competition is FIERCE among the Chili Chefs. There are 3 winners: 1st place, 2nd place, and 3rd place each with earning gift card prizes. The first year one of the winners brought a vegetarian chili. The chili was served in a steamed half of acorn squash! Tasty and lovely presentation. We've had more vegetarian and vegan entries since then. Bring it on!!

I just made this and it is super good. It is not very spicy but just enough. It is a little bit bitter but I paired it with butternut squash so it gives it a little sweetener, delicious 😋 I have also been eating it on romaine boats wit bits of pineapple for a little sweetener and acidity...great job guys thank you 😊

Never saw oat grouts before. I use to make Veggie Chili with Bulgar Wheat and TVP. I usually add beer and broth, chili beans (not kidney). I always use Cocoa, bell pepper* and celery. The cocoa is what makes it rich and seems like it has cooked longer, I got the trick from Mexican mole sauce. The nice thing about Chili, you can put anything in it ( but glad you got rid of the Cinnamon/nutmeg, lol)

I have never tried chili. It's not a common thing in my part of the world. I've seen other chili recipes but having never tried it I'm hesitant because I don't know how it should taste like. But Brian has made this so easy and compelling I'm definitely trying his recipe now!

I made the chili tonight. It’s yummy but I think I prefer bulgar wheat over oat groats. I also added lots veggies. Great job! ****update: the chili the next day was spectacular. I am making a batch today and will stick with the oat groats and add even more veggies than I did last time. This recipe is a keeper!!!

I've been adding cocoa to Brian's original chili for awhile. I also add about a cup of strong brewed coffee and use chipotle chile powder. Looking forward to trying the oat groats

I saw the video and had to make it today, it was great! The only change was I used barley groats since no one had oat. I also don't use can products often so made it from dry beans and fresh tomatoes.

In areas of Mexico, its common to add chocolate to spicy dishes (mole sauce) and spicy hot peppers to chocolate (hot chocolate). It mellows out the heat and makes the flavors deeper some how. Great combo. Remember this is sugarless baking cocoa, but Ive heard of using the sweetened kind too.

Couldn't fine the groats so I had to order, two day ship. Got them today and I MADE THE CHILI! Very good, very tasty...you know what I like about this chili, I can eat it and I don't get heartburn. I can only eat a little of the normal chili I make. This one is great. And I love the groats in it. They are chewy and give it a extra bam...

I just made this! The addition of the chocolate totally makes this dish. I used whole wheat kernels instead of the oat groats (because that's what I had on hand) and I cooked this dish for over 2 hours so the wheat would cook. Next time, I will try soaking the wheat a bit before using. This is a winner, Brian!!

I'll bet you could use pearled barley instead of oat groats. They have a nice chewy texture and a slightly nutty flavor.

Ooh....I made some black bean soup recently and I added quinoa to it. I bet that would be a good substitute for the oat groats too. Plus quinoa only has to cook about 15mins, so that would save time as well. 👍🏾👍🏾

I just made this , but ended up adding a few rando vegetables bc my biweekly produce box is arriving in three days, so-- some summer squash, corn, celery and a jalapeño...upped the cocoa and chili powder a bit to compensate for all the extra real estate--and oh my gosh, guys--this is the tastiest chili ever. Just made one nearly like this!! Great addition with the groats. Love them . I added a TB. Peanut butter to mine. Gives it a wonderful earthy umami flavor like you've cooked it for hours. Great recipe nice video!

Pro tip on buying the groats (after buying exactly one time), my grocery store has a make your own oats machine next to the make your own peanut butter machine. The raw ingredient in the hopper are groats. So they just sold me a container full of those and I was all set.
