An easy recipe for making crunchy kulkuls. Learn how to make the best kulkuls for Christmas. Kulkuls are a classic Goan bite-size pastry that is a traditional fixture on Christmas sweet platters in Goan homes. My recipe makes light and crunchy kulkuls that puff up and expand in the oil as they get fried, but without losing their shape.

@@PataCake It brings back great memories of my grandmum Amy Lobo from Poona who used to make Kulkuls, Neuris ( sweet puffs with sooji mixture.. plums etc) Rose cookies...and of course the Christmas plum cake when we used to go from North India to Poona during our winter hols. My late mother too gave us precious memories making kulkuls and the rest for us...we used to help her with delight...Thank you for making this lovely video! God bless!😊👋🏻

Veena hello idont want to put eggas when weare fryingin the oil the oil gets frosterand then the oil all come up and comes on the stove which is not safeursula thanks isent your receip to my sister stella in the uk she wants to make withher grand kids so i senther your receip

Ursula, the oil usually does not froth over if you have a deep enough and big enough pan. Follow my eggless recipe for kormolas which can also be used to make kulkuls. I've mentioned that in the video. You could send THIS recipe to your sister if you're concerned about the oil frothing in the recipe with egg.

Veena, excellent video with measured ingredients, simple explanations and tips. Thank you for sharing culinary experience and techniques. I've one question i.e. if egg white can be used instead of egg yolk to eliminate frothing in the oil. Please advise. Once again Thank You for sharing! God Bless!

If you check out my eggless recipe for kormolas and kulkuls (coming up in two days!) you'll see the oil froths in that video too. Some say it's the egg, some say it's the sugar. Not true, though. I think it's just the inherent property of the oil to froth unless anti-frothing chemicals are added to it.

Awesome I tried it and loved it but my husband wanted more sugar. Can I add a little more, will it affect the texture?

Go ahead, Sandra, and add a little more sugar, say around 2 tbsp more, if you want the kulkuls to be sweeter. But not more than 3 tbsp more according to me, or they'll be too sugary. All the same, increasing the sugar a little won't affect the texture. Glad you tried out my recipe and loved it.

No, Sunita, in this recipe the ingredients are well balanced along with the egg. And by the way, my recipe must be having the lowest proportion of eggs as compared to many other kulkuls recipes with egg. Also, I'm sure you'll be glad to know that my next recipe video will be an eggless one for kormolas and kulkuls and will be perfect for those like you who would rather do without the egg. In this recipe too the kormolas and kulkuls will be deliciously crunchy.

You're most welcome, Jacinta. Yes, this recipe is scalable. If you double the maida, you have to double all the other ingredients, if you triple it, then triple the other ingredientts, too, etc.

Do you melt the ghee after taking the measurement, sorry for the silly question.

Glad you asked this question, Jacinta. Actually these days, where I live, the pure ghee is in a melted state even at room temperature. So I measured the melted ghee. But there is a very slight difference in the volume of semi-solid and melted ghee. Just measure the ghee before you heat it.

Thanks a lot for your appreciation, Petra. Yes, the kulkuls are delicious even without any flavouring agent. So skip the vanilla completely or if you want you could replace it with ground cardamom.

Thanks for trying out my recipe, SS. But didn't quite understand what you mean by extra crispy. Extra crispy is good I would say. Or did you mean the kulkuls were falling apart? If the ghee is too much that is what would have happened. They would have uncurled completely and become crumbly.

So happy your kulkuls turned out nice and crunchy, Venissa. I have never weighed the kulkuls after I've made a batch. So I won't be able to give you an exact figure. But just to give you a rough idea, use around 2 and 1/2 times of the different ingredients.

RVS, you'll have to multiply all the other ingredients by 5. That is, 5 times the quantity of everything.

Mercy, I have never baked kulkuls using this same recipe. In my opinion, the existing recipe would need several modifications to get crunchy kulkuls after baking. For one, you would need to add at least 4 times the amount of ghee/butter or more, and chill the dough slightly before shaping the kulkuls. Besides, the texture too won't be the same as that of fried kulkuls.

You'll have to look in shops that keep baking equipment. These are also called gnocchi boards. On amazon they have the wooden boards which are costly.

Lali, I've already kept the sugar to a minimum in my recipe as compared to many other kulkul recipes. For 1 and 1/2 cups of flour, we're using only 1/4 cup sugar! At the most, if you still want to reduce it further, try not to reduce more than 1 tbsp, OK?

Thanks for your appreciation, Sunshine. Believe me, these kulkuls will be crunchy enough without being stiff. But if you want to add semolina, add not more than 1 - 2 tbsps. Do watch my next video. That recipe has semolina.

1 kg maida? Hope you have enough people to help you make the kulkuls, Mary! Well, for 1kg maida, you'll need 7+1/2 tbsp ghee (100g), 1 +1/4 cup sugar (270g), 2 +1/2 egg yolks, 1 +1/4 tsp salt, 2+1/2 tsp vanilla, and approximately (can't give you an exact amount) 3/4 cup milk. Add the milk gradually after adding 1/2 cup. Hope this helps.

Geraldine, the ingredient proportions have to be correct to make crunchy kulkuls. If you add more milk and more flour, than you would have to increase the quantity of ghee and sugar too in the same proportion. That's the reason why I mentioned adding the milk carefully to avoid the hassle of increasing all the other ingredient quantities too.

I'm surprised, Meenu. There's nothing in the recipe ingredients that could make the kulkuls soggy. And it's such an easy recipe. Perhaps your oil wasn't hot enough when you added the kulkuls to it.

Fry it on medimum heat only for seven mintues it has so much heat that it cooked by itself even after removing from hot oil

Abigail, the first time you make kulkuls the comb is new. Like I mentioned in the video, the kulkul combs are used only for making kulkuls and packed away after each use, and then taken out the next Christmas for making kulkuls again.
