Thank you for your ideas! I have been following WFPB research for about a year now, and I went from 187lbs to 157lbs. Your videos helped me expand what I am cooking for my family. I LOVE the Trader Joe's Fiesta Queso made with cashews. I add it to the pepper stuffing mix. I never would have tried this without your suggestions because I do not really like cashews. This has transformed my menu options, and even my teenagers like it. Teenagers rarely like anything adults want them to try for those who don't have kids, or have forgotten their younger years!!! Please continue to publish your ideas and humor:-)

Made this tonight and it was delicious. I didn’t have any red peppers but had a big butternut squash that I had to use up, so I roasted 1/2 and put the filling in the pumpkin. Yum!! Plenty of filling and tomato sauce left over so might go get some red peppers to fill tomorrow.

I just wanted to share a new product I discovered recently and thought you might like trying it as well. They are J&D's Foods: reduced-sodium Chicken Salt and Bacon Salt, hickory flavor. Both are great substitutes for flavoring your foods without using meat or replacing bullion cubes as seasonings. I use them in rice, on potatoes, stir-fry veggies, soups, beans, etc. The chicken salt (reduced sodium version) has 140 mg per 1/4 teaspoon and the bacon salt has 145 mg per 1/4 teaspoon. Since I ate SOS-free for nearly a year and I more in the maintain realm, I having been using a little salt here and there but still no oil or sugar. I am certain you guys, if you decide to try them, will be able to come up with some ways to use them that I hadn't thought of yet and if ya do, please share with us. I found your channel not long ago and I really enjoy your videos. Thanks for sharing your experience of the whole food diet as well as the great recipes.

Way to go Karen! I lost 8 pounds this week, too. I wasn't doing just plain potatoes. I was eating great big salads with beans and berries because it is Summer and hot where I am, but 8 pounds in one week for a postmenopausal woman is really good. I had been making a mistake of not supplementing iodine and D3 and B12 and had shut down my thyroid and didn't lose weight for such a long time. Apparently, cruciferous blocks the iodine and you need to take some and going no salt took away the iodine. (Sea salt doesn't have the iodine by the way, so supplement, but not too much.)

I love you guys! And stuffed peppers are such a good family meal, no one knows what’s in them anyways so it’s got to be easy to fool people into eating a WFPB meal. About the queso, I’ve been making my own based on a video recipe i saw. They used pickled jalapeños with the brine, with potatoes and carrots to make a cheese. So I had canned green chiles and used them Instead of the jalapeño. Look y’all in Austin green chile and queso go together like peanut butter and jelly. And not that jalapeños aren’t wonderful but with two kids under 10, they can’t handle the spice like their mama can. It’s delicious and I will also say that I wanted it so bad one day but my husband had used my last can of green chiles so I tried to sub with pickles.... and it wasn’t great. Not terrible but I wouldn’t do it again. I also make like cashew cream Alfredo stuff, but the potato cheese reigns superior. Try it out guys. I skip the oil and use less salt than the recipes I’ve seen, but hey cheese is oily and salty so it’s up to you guys.

I love mixing regular rice with cauli rice! It's a great way to add veg without getting an overwhelming flavor from the cauliflower. I don't like stuffed peppers, but I really enjoy your videos! Thanks for sharing.

Remember stuffed zucchini, tomatoes other vegetables can be stuffed just walk around and look and think if I steamed that for a minute or roasted that for a bit could I stuff it and with that taste good in it? If it's the pepper part. And our tastes change every few years so give things a chance once in awhile. I hated some things that I love now it just changes even bananas I skip every couple months I'll hate them and then all of a sudden they're fine? Strange

you 2 are great inspiration ! got a video idea for you - vegan dog food for your babies. my dogs are ~75% vegan. and thriving for years. and I know there are some who claim their dogs are 100%. my dog will repeatedly choose purple cabbage or broccoli crowns over meat treats.

This is a good one to share. Growing up I never really cared for stuffed peppers. They weren't bad but kind of bland so I was thrilled when I became vegetarian 25 years ago this Mexican veg version of stuff peppers were part of a starter recipe kit teaching about how to get nutrition and variety and things like that. I have loved them since and this is a staple in my home. They are easy, quick, adaptable and as you said you can do a larger batch and freeze. I'm a cook once eat twice kinda gal. Whenever peppers are on sale I do a couple of batches for the freezer. I hope many people will try this thanks to you. Edit: What is ironic is that last week when I was seeing your thumnails on my feed, I was thinking of making a comment asking you if you had ever tried stuff peppers this way, so I was kinda laughing when I saw the title. Hehe

This looks delicious; I can't wait to try it. Here's a tip: Use a can opener to open both ends of the can (completely go around the can, but do not remove the metal ends). Then hold the can upright over a bowl and put a couple of fingers on the top lid. Push on through.

As a foodie, who also went plant based and is working to lose weight, I appreciate that you take the time to really talk about and perfect the flavor of your recipes while working to remain within the guidelines of your plan. Last week I made Dr. Fuhrman's tofu meatballs and they turn out pretty good, although next time I would add more spices. Any chance we'll eventually see a "plant based "meat ball" or plant based burger showdown?

I like to add cooked quinoa in place of the rice to give the meal a little extra protein, but your version looks yummy too with the cauliflower rice/brown rice combo. I’ve also used enchilada sauce when I didn’t have tomato paste. They really are so versatile! Thanks for the great recipe to try! 😋

My very meat-eating husband loves these stuffed peppers. We’ve had them three times. And the tomato sauce topping is my new favorite tomato sauce. Next time I make the peppers though, I am going to make pepper “boats”. So much easier to plate and consume. (And more filling per serving!) 😎

made your full recipe . only 3 peppers. put the rest in 4 freezer bags, 3 in freezer- one in fridge. I use the filling for pizza topping, taco filling, anything I need a meat type thing for . thanks for the recipe

I would love avocado, tortillas and homemade non-dairy sour cream added to this. They look really good though. And of course we all just our own spices to meet our own taste. But I'm impressed. Sorry about the loss of that other pepper💀💜 ps love how they get better the next day or so if they last that long. Sometimes I would make it by cutting the peppers and half long ways and making little boats. It made more when you didn't have money to buy that many peppers sometimes peppers would be $3 a piece here. So making one into two was way better. Though I tried not to make Peppers when they were that high priced. Thank you very much again for reminding me about this. I don't cook like I used to and it shows not completely weight-wise more mentally. And it's not because it's plant-based it's because I'm not eating. So thank you I'm so glad I finally found you guys. I have lots of vegan friends I've been for 55 years come November. And of course as a child that would be called plant-based but it wasn't called anything other than why won't you eat question mark but I was 100% allergic to everything and I would seizure and break out and I hurt all over my body like the pain diseases that people have nowadays I was a very healthy person my whole life until just a couple years ago and I got exposed to chemicals and then lots of stress and so it's a lot like when I was a little kid again. And there's no one to help me if I had a situation where I was a couple like you two are it would be much easier. Or if I had enough money to pay someone to do what I told them at this point I'll take either one lol

@@Jewlz4ever absolutely! I also have thyroid cancer. And scary enough possibly it has move to someplace different that I'm not ready to talk about I haven't really talked about it with my person. Thank you so much for your well wishes I need all I can get. Money is such a huge issue right now that I would not even be sick if it was before I had the money to do what I needed to do to take care of myself or have somebody help me take care of myself if I was too busy. But now I can't even make the basics. And other things in my life for extra stressful and have been for a long time so I got sick because of the really bad things that happened. Life is weird when wicked things happen and you can't find a way to deal with them they manifest in your body. It sounds heavy but it's true I used to help other people heal because I have the degrees to back myself up. But when you're broke and you're not feeling well it's hard to take care of yourself. Well and taking care of others is a different. Again thank you for the good thoughts I need all I can get! People feel free to pile them on.

Gomez l Addams, I’m so sorry to hear about your cancer. But it’s really not a death sentence if it’s not too far progressed. The doctor I mentioned before, Dr. Robert Morse, has discovered how to cure cancer. Actually he has discovered how the body naturally cures itself of cancer (and every other health issue) by itself, if we just give it the proper chance to do so. I wrote up an email with all the info if you want me to send it to you. Let me know. We just have to get back to the very basics when it comes to our diet. According to the design of our digestive tract, we are frugivores and our bodies and health thrive best when we eat only fruits, and occasionally some leafy greens. I had a whole host of health problems that I cured last year simply by only eating fruit for 6 months straight. Fruit requires the least amount of digestive energy and yields the most nutrition for our bodies. So with all the extra energy available, the body puts it all towards healing whatever is wrong. A more fast-tracked way to heal would be fasting, as in eating no food and only drinking water. When the body is freed of the burden of having to digest food, it makes quick work of using all that available energy to put towards healing anything and everything that is wrong. Think of animals when they get sick or injured, they instinctively go into a fasting state to heal the quickest. Like I mentioned, I wrote up a long email with all the info if you’re interested, just let me know. Or you can just start watching Dr. Robert Morse’s videos if you want to learn about the fruit thing, or Loren Lockman’s videos if you want to learn about fasting. Two of the greatest men you’ll ever discover. You’re in my prayers! 💚

Made the filling two nights ago and we've been devouring it in quesadillas (with Violife cheese shreds) and on tortilla chips after sauteeing the filling with some baby spinach and drizzling with a vegan cheese sauce. I did however have jalapeño oil burning my hands for about 4 hours after cooking this so definitely wearing gloves next time!

I just found your channel and have been watching all your videos! I’m overweight and a Type 2 diabetic. I’ve been counting calories for about a month now and have already lost 25 lbs, but looking to switch to a WFPB diet. Your videos are extremely motivating. Also Jessica, I love all of your concert t-shirts. I work in radio and love live music too. I’m seeing Cage The Elephant and Beck in Houston this weekend. Really excited. Anyway, love the videos and keep up the awesome work!

Awesome! Thanks for watching ❤️ We love our WFPB diet... I genuinely enjoy food more now than I ever have before. It takes a lot of will power and time to adjust, but it is worth it. I know you probably have to be extra careful with how you change your diet with the diabetes... keep us posted on how it goes! We have both worked in radio 🙂 I did marketing and digital stuff mostly. Now I do marketing for concerts! Music has always been a huge part of my life ❤️ I am going to see that tour in St. Louis next week 😀 love Beck!!

Have you guys tried making the vegan cheese sauce with the base being potatoes and carrots and nutritional yeast? Jenna Marbles boyfriend Julienne makes it for her in his Aries kitchen lol. They love it. You guys are so pleasant to watch, God bless you and your channel :)

With a partner who doesn't like anything "scharf" or "hot" - I would likely make it a lot less hot with the Jalapenos etc but nice recipe - the cauliflower rice will have to be homemade as I haven't seen it in our local health food stores or organic shops (Bioladen) - need to check out making it and storing it too in the freezer.

You can definitely leave out the jalapenos! Also, you can replace the cauliflower rice with extra regular rice, we just like the combination! :)

What area do you live in if you don't mind me asking? Also just taking a real cauliflower cutting it into quarters and just keep cutting it and then put it in a little food processor if you have one a bit at a time and pulse it until it resembles rice. You can just steam it can a frying pan by mixing it back and forth was a little bit of water or broth. I eat it raw with seasoning on it like liquid dressing kind of things. I've even made veggie sushi with it. But you have to marinate it with the sushi rice Goody's. I'm surprised you can't find it in the freezer Department that's why I asked where you lived that's where you find it and it does kind of hide in some places but if you're in another country maybe they don't have it if you're in the US maybe ask the manager to start carrying it. @@KrocksInTheKitchen I quite fancy making it - I am early retired and cooking is my hobby so cauliflower rice is interesting - just made my own hot sauce with brine pickled chilli peppers - I tend to add it to the dishes after cooking as it adds a small amount of kick.
