I do the same thing with my taco shells. I like to drape each tortilla over two bars of the oven rack to allow for more room when I fill them later.

I brush the corn shells with aqua faba so I can season them and it sticks as I'm still eating salt ;) Love mexican food for it gives me all the bold flavor I like without all the bad stuff my old self still craves. Lentils seasoned with taco seasonings make a good beefy substitute also for my mexican meals...

To make it a little safer, pull your rack out of your oven about halfway - place your tortillas on it, and carefully push it back. It will help with better placement when you're not as scared of being burned. Those look yummy! I love a little thinly shredded jicama for a refreshing crunch, too!

On a somewhat related note, my husband is a junk food vegan and he pretty much vacuumed up the refried beans & hummus I made following your recipes. I tried baking the shells in the oven today, we really loved how crispy these were. Here is a suggestion, if you have a cookie cooling metal rack or one from a microwave which is metal, it can be adjusted side to side to make a flat bottom taco shell which will stand up on its own. I used regular size tortillias to do this today and they were more squattie as I put them over two oven bars on the racks. They were easy to eat and stood up at attention while the first one was consumed. Great idea you both had. Love it.

I never thought of baking them on the rack that way! I quarter mine (to make chips) and bake on a silicone mat/baking sheet at 400 F x 10-20 minutes: 10 minutes for normal corn tortillas, and 20 minutes for jumbo (which I've only found in Southern California). I will be trying your method soon, thanks for always sharing your amazing ideas, guys!!!

I love leftover meals where I assemble a meal from what is in the fridge and freezer - easy and filling - having gone completely whole food plant-based with no added oil, sugar or salt - I make a lot of stuff so my fridge is perpetually full of plastic boxes of leftovers.

I get the corn tortillas but brown them slightly in a non-stick pan so they are crispy and not burnt but can still be folded in half. I make fresh salsa, I use Spanish rice mixed with the refried beans, lettuce and a wee bit of Daiya shredded cheese, sometimes some Boca Burger Original Turk'y burger or Morningstar Farms Black Bean burger -- one of these not both is divided between the two of us so 1/4 or a crumbled burger in four tacos and we eat two each. I do use salt in my salsa but that is all the salt which is used and they disappear easily. One of our favorite meals.

Oh, my! I love the idea of baking them on the oven rack! However, you could just make them Tostadas which is leaving the tortillas flat and throwing every on top and just eating them that way. Either way, those tacos looked super delicious!!😋😉

Hey you two, I don't know where you found the strength and will power to continue this new lifestyle. I see you and others successfully changing your diet and losing weight and then there's me who decided to quit soda two weeks ago and did pretty well except a couple of cheat days that I allowed myself because I couldn't stop thinking about it (soda). Two days ago I had a cheat day....and then the next day I caved into the craving, now I caved again today. I feel like I've failed this no soda goal and that I'm never going to be able to quit. It is such an addiction! I've been crying and feeling hopeless all day. Sorry, just needed to talk about it. My husband doesn't understand why I even want to quit.

We have a local place that does 'funny tacos': soft shell with schmear of queso meltiness, wrap that around a hard shell and then fill as per usual. Extra yum! Oh, **notices Siete hotsauce** they make queso, too. Blanco and yellow. And grain-free tortilla chips. Sal y Limon is muh fave.

Actually I draped the tortillas on the rack before turning on the oven and they came out great. Jessica if you did this you could quit worrying about burning yourself (and others). I also opted for the two bars so that I could get more filling in.

Great idea for the tortilla shells! Maybe if you put the shells over a couple of the wires on the rack instead of just one they would be easier for you to fill...just a thought! Enjoy your Weekend!

Use a baking rack to make the taco shells without burning yourself! Not the mesh kind, the slat kind (looks like a mini oven rack for cooling cookies on, etc). I have one that stands on fold out legs so I can sit it on a baking sheet and put it into the preheated oven. Or if you have a rack without legs then put it over a deeper pan to allow the shells to hang down.

Try draping the tortillas over 2 bars/wires instead of 1 in the oven, the shell opening for the fillings may be wider and easier to fill. Good luck! Love your channel and videos!

Looks yumm! When you said you were going to give your cautions about baking the taco shells I assumed you were going to suggest having a sheet pan below in order to prevent any pieces falling near the heating element. I appreciate all the tips and tricks! I was surprissd by the julienned zucchini but I love that idea. Julienned jicama would work well too, and my Mexican friend Rosie always adds thinly sliced radishes. Food for thought!

Don't make your shells that way. They could fall onto the heating element and start a fire. Just take a muffin pan, turn it upside down and nestle the shell between the humps. Works perfectly.

Heres a couple of alternative taco crisping methods(for safty), if there is no need to preheat oven place them on cool rack, then turn on oven. adjust time, and turn off oven 5 min before removing. 2cd method, if you feel preheating is necessary, remove oven rack, turn on oven to preheat. Just before cooking hang tortillas on cold rack and slide into hot oven. I would crinkle up some alum foil on rack so tortillas are less likely to slip.

I went thru the shells balancing on rack and now have just gone with slapping mine flat since they are a lot easier to cook and eat that way anyway and cooking flat, they often curl up like the taco boat shells that are popular. I like to bake my corn tortillas at 325 degree and bake them a bit longer to make sure they are super crispy. Baking them a little lower, they won't burn. I burned a bunch of tortillas through the years baking them higher. Also, I just lay them flat on the rack to make a tostada shell because I always broke the shells. Can you tell I am a spaz???? Love the idea of adding julienned zucchini! I will try that! Also, your pinto beans are fabulous! We make them all the time now!

Just tried the tacos tonight! Yum! We already use TJs White Corn Tortillas for nachos and chips (by baking in the toaster oven), so I knew this recipe would be a hit. Couldn't find the vegan cheese at our Trader Joe's, so alas, our tacos were missing that. Glad you posted this video. We didn't have time to make the stuffed pepper mix, but it was good anyway.

What you could do with heating tortilla is take the top rack out while the oven is heating put shells on the rack. then when oven is ready put the whole rack in with tortillas on them

We love making taco salads. Last time we used the remainder of the stuffed pepper filling too. I use the Engine 2 tortillas (large ones) and toast them in the oven using a nonstick taco salad shell mold. Then we fill it with all the WFPB goodness and gobble it up. I ordered a taco shell rack from Amazon. It will keep the shells open wider and then I don’t need to use tongs. Last time I did this, the shells curled around the rack and I had to break them to set them free. 😂

My favorite taco is potato tacos....air fry some spicy crispy potatoes slices/pieces, add avocado, olives, grilled onion & bell pepper, bit of roasted hot pepper & cilantro, tomatoes ..salsa and fake cheese if you want......side dish of coleslaw, with shredded purple cabbage,shredded carrots, squeeze of lime, salt & pepper and dash of oil & vinegar...
