@@urbaniteurbanizer1612 I used the same recipe but I added about 1tbsp gula melaka which will give a nice flavour also the deep red color. I added some Adam java juice while the sambar was cooking. Maybe about 3 tbspn of the juice.... then I threw in some daun pandan which I knotted 4 leaves. This just gives an extra aroma

I tried this and my husband loved it. Had to substitute one or two ingredients because I didn't have or we don't find it here in South Africa. I actually didn't add the salt because I didn't see the comment until now but it still came out lovely.

Yes I forgot to mention in the recipe and have pinned this in the comments too. 1 tsp salt while marinating. It should be enough. Taste and add more only if needed towards end

Thinking of preparing this dish for my grandkids. Wonder if I could substitute fresh chillies with paprika? Should I add bit of the heart of lemongrass to the purée? What about belachan? Don’t know what to do the blocks in my fridge?

Adding paprika can totally change the flavour and if not cooked correctly can turn out bitter. Adding the lemongrass to the puree is ok as long as you can finely grind it. Also better to use very little. Belacan a little of you like that flavour more! I would try it without once though.

In the case of boneless breasts it is really important that the chicken is not fried too long after marination of 30 minutes. You should still get a golden bouncy crust that is not cooked through. Since it has to be cooked tender in the sauce. So the pieces should not be too big. Large bite size will be better. 👍

Recipes are Simple For some reason, my chopped onions turned out bitter and it really messed up the sambal sauce after cooking. :( It’s ok, it was just meant to be. lol I’ll try your another recipe next time. 😁

Sounds Like burnt onion.. i do mention that you need to have that amount of oil and reducing the quantity you risk the chance of the paste burning. Still so sorry to hear it and I am sure it will be successful on another try💕

Can one omit the Thai sweet and spicy chilli sauce since there's already sambal (sambal is also spicy ) ? Just afraid that it may be too spicy . If some sweetness is needed, can one add in some brown sugar instead of the Thai sweet & spicy chilli sauce ?

You could, but this Sambal chicken is actually *not overly spicy.* The hot and sweet sauce givesa better balance than if raw/ brown sugar is used. Do let me know if you try this wiith brown sugar

It's how it is usually made. You can reduce the oil to suit your taste. And use less dried red chillied to reduce heat. The fresh chillies are rather mild in heat, and add more aroma than spice.

She is right. You can adjust the amount of oil. I have a similar dish like her malaysian chicken styled and so far the process are same. Except some ingredients. The reason why the oil was so much is because it will be tastier and if it was sold then it means more consumers. Less oil will also make this dish delicious. I usually use it less then just add some water to keep it from burning.
