Some tips from a mixed Chinese-Nyonya Malaysian: 1. Best add the coconut milk last, this will help avoid funny coconut oil smell. 2. Use fish sauce instead of salt for final flavour adjustment, the umami of fish sauce helps double the taste. 3. Use tamarind juice instead of lime/lemon juice. 4. If you can find Malaysia's shrimp paste AKA belacan, pan fried it or bake it over fire before adding it into the blender/food processor.

Actually, if you wash your blender and leave in the sun, the yellow from the tumeric disappears. My mom told me she used to hang tumeric stained whites in the sun to get rid of the yellow. It works on my nutribullet.

I had some brilliant Malaysian food when we lived in KL in the late 1950s. Nyonya food is a particular favourite. Beef Randang, Laksa just start the list of glorious foods.

The Story behind the name is as such. The chef /cook was cooking Curry one evening. The ship's Capitan smelt the aroma of the cooking curry. So he asked the cook..." What are we having for dinner? Is reply he said " It's curry, Captain." Hence its name "Curry Kapitan". Incidently I cooked Chicken Curry Kapitan for my family. 🤗

I just made this for dinner. I absolutely loved it! I made jasmine rice and roti to go with it. She's definitely right about that shrimp paste. Just throw it in without smelling haha

I've been living in Malaysia for the past 30 years and Nonya Baba cooking is the best in the world. When you ask an old Nonya auntie how to make, they will always leave one item out! They take their recipe to the grave.

This is a really unique recipe for me. I'm from Pakistan and most of these ingredients are not commonly used here. But that makes me even more eager to try this because I just love trying new and different things. Would definitely search for these ingredients and make this curry.

Thanks for sharing. Finding these dishes brings back memories of mum making it in the kitchen and me smelling it from down the street as I walked home from school. Now mum's gone and being an only child/son, I'm trying to find all the recipes for the foods mum used to make as a way of connecting with her. Luckily, my wife loves spicy foods (I cook sambal tumis telur, beef rendang, etc from scratch). Going to try making roti jala (need to find one of those special scoops), keuh lapis and all my childhood favourite dishes mum used to make. Keep doing these videos.

I love Kapitan Curry. We had Chicken Kapitan Curry (from a jar) this evening. I haven't made it from scratch yet, but I will be doing it. Marion's comment about the difference between pastes made in a food processor and with a mortar and pestle are very true. Try making Thai fish cakes by breaking down the fish by tossing fish pieces into a bowl and compare it with the fish done in a food processor. The texture is totally different. The food processor one is like rubber.

If you have any leftover of this curry the next day it taste even better. I kid you not. The flavours after it's a day old is just divine. Mop it up with white bread or roti canai. You're welcome.
