Ana, I am going to give this a try! I have made red pork pozole many times and my family loves it. Will need to try your green chicken pozole also. Have made several of your recipes and everyone has loved them. My husband's favorite is your bean sauce for chilaquiles. He will eat it on everything! Thank you for a great recipe!

@SaltyCocina we have done that also. Will also just eat it as a dip. Hubby will put it on his sausage, potatoes and scrambled eggs that he takes out with him on the truck. I'm sure there's more that he will put it on. I have shared the recipe with several people.

Those peppers come in a variety of spice levels. The chiles de arbol are also optioal.

@saltycocina question, what if you use the hominy that isn't in that hydrated lime. The one at cardenas comes separated like beans. Would you soak those or cook 1st? Then remove the little hard end?

Soak them overnight and boil them in the hydrated lime for an hour. Cool them and then rinse them to make the pozole

I literally just made this and I'm watching again. I'm still coughing from the chilies. My man friend comes over and asked why not just blend it all and strain the seeds out. Have you tried this? I want to try it

I did strain it in the past but the blender I used does such a great job, there is no need to strain it,
