For the chiffon cake:
Dry Ingredients:
2 1/4 cups cake flour [254 g] - amzn.to/3HhfAm3
3 teaspoons baking powder [12 g] - amzn.to/47FyXQm
1/2 cup sugar [100 g] - amzn.to/48VsDFh
1 teaspoon salt [6 g] - amzn.to/3O5bvoS
Wet ingredients:
8 egg yolks (egg whites will be used for meringue mixture) [160 g]
1/2 cup canola (or vegetable) oil [120 mL] - amzn.to/3w6eg3i
3/4 cup whole milk [180 mL]
1/2 cup ube halaya (ube jam) [120 mL] - amzn.to/4aQlMz3
1 tablespoon ube extract [15 mL] - amzn.to/3U3R3s7
1 teaspoon purple food coloring (gel paste) [5 mL] - amzn.to/4aSwox7
Meringue:
8 egg whites [240 g]
1 teaspoon cream of tartar [3.4 g] - amzn.to/3WctbUo
3/4 cup sugar [150 g] - amzn.to/48VsDFh
For the frosting:
8 oz cream cheese (at room temperature) [226 g] - amzn.to/3w3373p
2 cups heavy cream [474 mL]
1/2 cup sugar [100 g] - amzn.to/48VsDFh
1 teaspoon vanilla extract [5 mL] - amzn.to/3HflEvn
Alternative Buttercream Frosting Recipe (Swiss Meringue Buttercream Frosting):
This is more stable, and will hold at room temperature in the summer or in warmer climates, like the Philippines! Use this frosting recipe if heavy cream / thick cream is not available.
Ingredients:
5 egg whites [150 g]
1.5 cups sugar [300 g] - amzn.to/48VsDFh
1 lb unsalted butter [454 g]
1 tsp vanilla extract [5 mL] - amzn.to/3HflEvn
Procedure:
- Whisk together 5 egg whites and 1.5 cups of sugar in a glass or stainless steel bowl.
- Then heat in a low heat water bath while continuing to whisk, till the sugar is dissolved (when it feels sticky to touch, and you hardly feel the grains of sugar anymore).
- Take it off water bath. And using an electric mixer, beat this mixture until it is glossy and stiff peaks form. Let it cool down to room temperature.
- When it is back to room temperature, continue beating and slowly add 1 lb of room temperature (unsalted) butter a little at a time (I slice them into 1 or 2 tablespoon size cubes).
- When the butter is fully mixed in, add 1 tsp of vanilla extract and mix until smooth.
- Continue to frost cake like in the video.

Thank you for this recipe Kurt!!! Being married to a French, it's always difficult for me to find a good Filipino desserts that would please french palate 😁 My hubby is also very good at making desserts which gives me more pressure. I tried this recipe twice!!! Once for a 50th bday, then 2nd one was 2days ago. Just finished the last sliced. This recipe is sooo good. Not too sweet, not écœurant as what my MIL said. Everyone loves it!!! My daughter adores it, even brought some to school and let her friend tasted it. I'll keep this recipe of yours. Something I'll be proud making and bringing to parties here.

I've been agonizing for weeks over which recipe to use to make an ube cake, I'm excited to have finally found the one I want to try, thanks Kurt!! This is the best version of Ube cake online. I made it several times already as well as the roll cake and gifted it to friends. I have made individual cakes and small versions (macarons-size) with a bit of creativity, it never fails me. Thank you Kurt and I hope you will grow your channel. P. Tried it yesterday for my mother in law's bday and it turned out good.everyone loves it especially my mother in law.i divide the frostings in to two,the other half i add 1/4cup of ube halaya ginawa ko syang pang decor,ang saraaappp!!thank u for sharing this recipe❤

Just baked this Kurt with Smbc.my kids said it is like a store bought Ube cake.i take it as the best compliment yet thanks to you!!!!💜💜💜💜💜💜 did your tip as well with the paper towel and aluminum foil.it did the trick, almost.nag cave in sa bottom ng pan even when i turned ot upside down sa rack to cool.maybe i left it too long.but still successful. Can't thank you enough!this is jow my go to ube cake recipe.i ised ube jam instead of halaya 😊

I made this (with macapuno strings on top) for my mom's birthday and it was a hit! They couldn't believe that the cake was homemade because it was so good! Thank you for the clear instructions! Thanks to you, I learned how to avoid having a dome shaped cake 😂😂

Made this for my birthday today. I substituted canola oil with olive oil, vanilla extract for the ube extract (didn't have any), and Russian buttercream for frosting. It came out masarap. The sweetened condensed milk of the Russian buttercream gives off a taste of coconut for some reason. Love your recipe, it's a keeper, I wrote it by hand! Next time ube cake for Nanay will have the ube extract. Salamat for sharing Kurt!

I have finally found the perfect ube chiffon cake recipe, thanks to you, Kurt! Your recipe produces an airy, very light, very moist ube chiffon, I love it! I was very skeptical at first, I'm no professional baker, so I was worried that the ube halaya might weigh down the batter, but lo and behold, the cake had a perfect rise! Yay! Kurt, you are amazing. Tofia Kepasi Hi Tofia. I get my ube jam from a local Filipino store in my neighborhood in NYC. Depending on where you live, it’s available in Filipino/Asian grocery stores or online. If you’re not able to find ube jam, you can substitute with ube powder - you just need to rehydrate (according to packet instructions). Hope this helps! 😊

@@natelloyd4796 Hi Nate, thanks for your question. Yes, you can use fresh ube. I'd suggest making it into a paste (halaya) before mixing it into the batter. Just boil 1 pound of fresh ube (peeled) in one can of coconut milk (14 oz) and add 1 cup of granulated sugar. Let this boil on low heat for about 40 minutes till the ube is soft. Try to mush up the ube as best as you can - use an immersion blender if you have one. Once it is a thick paste, let it cool to room temperature, and then mix it into the wet ingredients like in the recipe video. Hope this helps! :)

Aaron Nolos Hi Aaron, thanks for your question. You can use 1/2 cup of boiled/mashed ube instead of the 1/2 cup of ube halaya. You might want to add a little extra sugar to compensate (ube halaya has some sugar in it) - but it shouldn’t make too much of a difference to the overall cake since the frosting carries the majority of the sweetness. Hope this helps! 😊

Your ube cake recipe is divine! It’s my first time to make a cake and it turned out well. I added macapuno on top of the cake. haha, tried making a rosette topper but it’s not thick enough so it looked like a melted rosette. But the cake itself tastes so good! My family loved it. Tried this recipe yesterday for the birthday cake of my husband, and it turned out amazingly good!😍😍Sobrang moist and it`s so yummy, though medyo hindi maganda ang whipping cream dito pero naging yummy parin ang kinalabasan. The Norwegian hubby of mine loves it and he took some for his friend to taste too. I know he will love it coz he loves ube polvoron, but the reaction was awesome! @@junella8964 Hi Bernadette, thank you for your question! Cake flour is a little different from all purpose flour - it has less protein than all-purpose flour and it results in a softer/lighter cake, finer crumbs, and more rise. For a lot of cakes and baked goods you can use all-purpose flour, but with chiffon cakes like this one (or angel food cake) it really makes a difference using cake flour. If cake flour is hard to find (which in my experience, it was! My local Food Town and Whole Foods didn't have it. I had to go to a Target to find cake flour), you can substitute cake flour with all-purpose flour and cornstarch. For every cup of cake flour needed, add 2 tablespoons of cornstarch in a cup measure. Then fill the rest of the cup measure with all-purpose flour to make 1 cup. Then sift together like in the video to make sure they are well combined as well as aerate the flour. Hope this helps! :)

Hello! Yes, you can use ube powder instead of ube halaya - just reconstitute it in hot water (per packet instructions) to make an ube paste, and add 1/2 cup to the wet ingredients, like in the video. Hope this helps! :)

The paper towel& foil technique is a life changer! The cake is soft, delicious and the texture is perfect! Just putting in finishing touches and it already looks amazing! I had to make some tweaks though because some ingredients were not available. I used almond milk and coconut oil instead. It still tastes amazing! Thank you so much! My lola loves ube cake and will give this to her tomorrow for her birthday! Im sure she will love it too!

@@cookingwithkurt oh Thank you. I do keto thats why those are my milk and oil. My lola does not do keto so i had to make a regular one. I had to make ube halaya from scratch too! Actually, your recipe is doable in keto. Just few conversions and no ube halaya ( just plain flavoring). Anyway, thank you so much! Your recipe is the best so far with some tips for the books!!
