Ingredients:
Red Velvet Cake
Measurements for two 9 inch round pans 2 inches tall or for three 9 inch or four 8 inch shorter pans
3 3/4 cups (15 7/8 oz / 450 g) cake flour
1/4 cup + 3 tablespoons (1 1/3 oz / 37 g) 100% cacao powder (not cocoa powder)
3 tablespoons (1 1/2 fl. oz / 45 ml) red food coloring
5 teaspoons vanilla extract
1 1/4 teaspoons salt
1 1/4 cups (2 1/2 sticks / 10 oz / 284 g) butter, softened
3 1/3 cups (1 lb. 7 1/3 oz / 662 g) sugar
5 eggs, room temperature
2 1/2 cups (20 fl. oz / 590 ml) buttermilk, room temperature
1 3/4 teaspoons baking soda
1 1/2 teaspoons apple cider vinegar
Reduced Measurements for two 9 inch or three 8 inch shorter pans
3 cups (12 3/4 oz / 360 g) cake flour
1/3 cup (1 oz / 28 g) 100% cacao powder (not cocoa powder)
4 teaspoons vanilla extract
2 tablespoons + 2 teaspoons red food coloring
1 teaspoon salt
1 cup (2 sticks / 8 oz / 227 g) butter, softened
2 2/3 cups (1 lb. 2 5/8 oz / 530 g) sugar
4 eggs, room temperature
2 cups (16 fl. oz / 475 ml) buttermilk, room temperature
1 1/4 + 1/8 teaspoon baking soda
1 1/4 teaspoons apple cider vinegar
