You can make a good substitute for buttermilk with regular milk. Stir 1 tablespoon lemon juice or vinegar into 1 cup (240 ml) milk. Let stand 10 minutes at room temperature and it's ready to use.

The sugar in the whoopie pies is granulated white sugar. The sugar in the filling is confectioners (powdered or icing) sugar.

I store the finished whoopie pies in the refrigerator because of the cream cheese filling. You don't need to refrigerator the batter before you bake the cookies.

Because the filling contains cream cheese, I always refrigerate the whoopie pies. I've never stored them overnight at room temperature.

I'm sorry, but I'm not sure exactly how long. You want to bake them until a toothpick inserted into the center comes out clean or until when lightly pressed, they spring back.

You really need the baking soda (bicarbonate of soda) in this recipe because of the buttermilk. So I don't know how the whoopie pies would be without it.

I would try baking them for 5 minuets then check on them by sticking a toothpick in them. mainly try to keep an eye on them while baking.

Hi Stephanie!! I just made this recipe and the taste is amazing!!... In my country I don't have buttermilk, so I used the milk substitute you suggest(milk and white vinegar), but the batter became a little bit liquid/thiner than yours, and cookies stayed thin and didn't grow as yours... Do you have any suggestion so I can get those beautiful whoopies?
