I was literally about to ask how did/do you cook the king. Oily fish best smoked? Can you link a recipe to try? I’ve never smoked any personally. Thx!

@@Phelpsie06 How I do it is, I cut the fillets off the king fish leaving the skin. Cut each fillet into 1/3rds. Depending on size about 8”-12” each. Soak in a salt water, brown sugar brine in the fridge skin side up. The fillets should float. If not, add more salt. About a cup of salt should do and a cup of brown sugar should do. Let sit for 24-36 hours in the fridge. Take out and pat dry. Add some seasonings of your choice to the meat side of fillet. Take 2-3 sticks of butter, A cup of brown sugar and honey and put all into a pan on the stove. Bring to a boil and let it caramelize just a little and then take and pour on flesh of fillet when you start to smoke. Smoke with apple wood for about 1.5 to 2 hours at 225*. Maybe less maybe more so you will need to watch. With all that said. This will be the very best king fish you will ever have. I planned on making it into a dip. But the fillet turned out so good we ate it as a meal. Don’t be afraid to hit me up with any questions.

No two ways about it. That boat screams for a T-top. Just get one that bolts to the console and not the deck. Unless you have a deck plate or backing plate installed for the the feet of the T-top to thru-bolt into.
