Today we have a great recipe that is one of our absolute favorites. It's important to us both as heritage, and as how healthy and "bereketli" it is. Bulgur means boiled, dried and cracked wheat grains and it comes in different sizes. When it is coarsely ground, we use it to make pilav. Medium grind is usually used to make kısır and dolma. Finely ground bulgur is great for soups, meatballs and veggie balls. To give you a clear picture, if Asia is the homeland of rice, America, the homeland of corn, Anatolia is the homeland of bulgur wheat. We use bulgur in almost every dish. It is nutritious, fulfilling and a superfood so it is a good ingredient in times of famine as well. Today we will be making the ultimate Bulgur pilav the way my dad taught me. 2 cups coarsely ground bulgur
2 onions, diced
1 small carrot, grated
4 cloves of garlic, sliced
2 tablespoons olive oil
1 heaped tablespoon + 1 teaspoon butter
2 tablespoons hot red pepper paste
2 tablespoons tomato paste (alternatively, 200 ml tomato puree)
400 g boiled chickpeas
1 tablespoon dried mint
1 teaspoon dried thyme ( or oregano)
1 teaspoon salt
1 teaspoon black pepper
To garnish:
Pickles
Savory yogurt
• Brown the 1 tablespoon butter and olive oil in a pot.
• Add in the onions and sauté for a couple of minutes.
• After the onions are softened, stir in the garlic and continue to sauté.
• Add the tomato and pepper paste. Use the tip of your spatula to mix the paste with the onion and garlic evenly.
• Add the bulgur, carrot and chickpeas. Continue to stir after adding every ingredient.
• Time to spice up the pilav! Season with dried mint, thyme, salt and black pepper and add 1 teaspoon red pepper flakes, if using sweet red pepper paste.
•Pour in boiling water up to 2 cm higher than the level of the bulgur. It will take around 4 cups of boiling water depending on the size of your pan.
•Add 1 teaspoon butter and simmer for 10-15 minutes-depending on the size of the bulgur- on low heat. Unlike rice pilav, leaving a little water at the bottom of the pan will make your pilav better.
•Turn off the heat and cover with a kitchen cloth and let it rest for 10 minutes.
•Fluff up and serve with yogurt and pickles to level up the joy and eat the bulgur pilav like we do!

I used to eat this when I was a student in Ankara. When I returned home to Bosnia I could not find it in any restaurant. When I saw this I immediately made it because I had all the ingredients. It tasted just as good as in Turkey. Thank you Refika.

I just came back from Side, Turkey and I left with tears in my eyes ...I feel in love with the kindness of the people ,the beauty of the land and the very tasty food..I came home with change of my mood as I had some depression and anxiety...I went to the beach just about every day just to walk along the shore...I miss it so much..and one day I will hopefully go back..The shop keeper I got to know told me I was turning Turkish because I got a dark tan and loved the food..and I am a light redhead and came to Turkey very pail..and now my husband calls me a bulgar monster..LOL I think the Turkish are the masters of garlic..I do love garlic,and my husband does too.. I finally had time to make it this morning. It’s currently simmering and the whiff of mint when I checked it was heavenly. One tip about the onions. If you’re crying while cutting onions sharpen your knife. Your knife isn’t slicing through it but actually crushing it, releasing the chemical that causes crying.

Rafika hi, I am from India. We call this as Daliya. We add some lentils, and also add, peas and potatoes. We also make a sweet version of the same with sugar and Ghee and lots of dry fruits. But when we make the spicy one we add ginger garlic paste, some cloves. Pepper and cinnamon .

this is not Daliya Mr. Pant. I know Daliya and tasted it. Dalia and Bulgur both are similar in the sense that both are wheat-based whole grains. The difference is that Bulgur is mostly parboiled before drying and it retains a bite, while Dalia is soft and easier to digest. Turkish bulgur is the main meal ingredient while Dalia is mostly served as a breakfast item. I lived in india like 8 years, so i have the idea.. :) Thx.

@@evrensahin165 Daliya is broken wheat and we get it in many sizes. I mean the one which is thicker and the one which is fine. The thicker one takes a long time to cook. We make salty daliya where we add dals to it. We add vegetables like carrots, beans, onions, peas. This is had for lunch or dinner.

Reminds me of when my Anneanne used to make it except for the pickle juice. You really need the lemon to brighten it. It is still nice to see mint used properly.

I LOVE bulgur, it almost feels like the "wholemeal" version of rice. I ate it a lot as a rice substitute because it has fewer carbs, more protein and makes you feel full longer. It goes really good with creamy Greek yoghurt and roast chicken. I'll definitely try this recipe. Lots of Love from Sweden!

I substitute Bulgur for all rice dishes, no more rice, with experience it will test better than rice. When cooked with broth it is testy.

Using Bulgur, and indeed tasting it for the first time ever, I made this bulgur pilaf minus the pepper paste and dried mint, using red chilli powder and fresh mint instead! Everything else was as mentioned in Refika's recipe....and what a pilaf dish it turned out to be!! Wow!! Was just heavenly!! Thank you Refika! Loads of love from India!

Choc Gazel😊. I met a Turkish Business couple in Cannakle, in Turkey in early 1989. I stayed with them for a speaking English Holiday. 😅😊 I loved them, their family, Turkish food, the people, culture and experiencing Ramadan and Pide bread as well as Turkish Halva. I wanted to return, but have not yet done so, due to many things.....getting a Degree as a Mature student etc. So when I watch your channel, at least I feel as though I'm back in Turkey for a little while 😊🎉. Love this recipe, thankyou. I cook it each week. I fry off some salmon, flake it, and stir it through the bulgur at the end. With some mushroom/thyme/tamari gravy on the side. Delicious.

Every time I watch your recipe, I find a close relative of it in Indian cuisine. It just makes me say, what a small world! Pulao/Palav is a staple of Indian diet and watching the Turkish version of it was indeed a pleasure.

Bulgar really is a wonderful item to put in soups, stews in stead of barley, use as a breakfast, or in a pelf like this. Its so versatile. Just realized I have none in the house, must go get some tomorrow, going to make a beef stew + this will compliant the beef wonderfully.

I had bulgur for the first time yesterday. No chickpeas, carrot tomato or butter just onions with lots of garlic, vegetable stock, black pepper and FRESH mint and thyme from the garden. Wonderful!

I always order this when I get Turkish food because it's so simple and comforting - after I watched yours I went to the shop and got some coarse bulgur to make myself! In Brazil we have our everyday rice and beans but I prefer this one 10000%! Can you do a cig kofte recipe too pls pls pls? Thank you for the great recipes and your amazing energy

Çiğ köfte is realy hard. You can't make it at home and you have to get an education. (I'm turkish and I have to say most of the Turkish people can't do çiğ köfte. You can do this without education but it will not be good as other variant.)

Most means I had tomato cucumber salad, shorba (lentil soup) and bulgur rice! Sorry I don’t know all the Turkish names for these dishes! Everything was YUMMY. I’m so happy to learn bulgur rice. Btw in India we make something similar with the coarse wheat, called dalia. It is delicious as well. Thank you 🙏🏽🌿🎶🌸🪁🐝☀️

I am indian who lived in israel for 6 years. I made this bulgur pilav very often- my recipe was a favourite among my friends too! My recipe uses little less onion and butter. And i used to add a tiny pinch of cinnamon powder towards the end like when its 80% done.
