No-Bake Mosaic Cake
Servings: 10-12
Difficulty: Easy
Cooking time: 10 minutes + freezing
Prep time: 15 minutes
1 cup sugar
1 cup milk
½ vanilla pod, halved
150 g butter
3 tablespoons cocoa powder
1 egg
500 gr petit beurre biscuit (or any kind that you want), crushed
4 kumquats, thinly sliced
* Mix sugar and milk. Take the seeds of vanilla pod and add the seeds and skin into the milk. Once the sugar dissolves, set it aside to cooldown.
* Melt butter in a pan, add cocoa and mix until they get creamy.
* Remove the vanilla stems from the milk mixture. When the milk mixture comes to room temperature, add egg and the cocoa-butter mixture into it and whisk until mixed.
* Add kumquats and the milky cocoa mixture to the cracked biscuits. Mix them for a few times without mashing too much.
* Put it on a baking paper and shape it by using your hands. Make sure there is not any unfolded area of the dessert. Freeze it in the freezer as one piece or you can make small cubes by using an ice cube tray covered with a refrigerator bag.

My family is Greek. My mother was born and raised in Istanbul. In her family they called this Salami. Now my kids love this and make it themselves. That recipe doesn’t use milk or egg. It uses sweetened condensed milk.

I do this dessert very often, and use film and make a roll. My grandchildren love it . I use Belgian chocolate and sometimes add almonds or pistachios.

Here in Malaysia we have something similar, too.We named it as Kek Batik. But some make ( sell) and top with chocolate ganache and sprinkle almond flakes Others go further layering with white choc mousse and top it with choc ganache - known as indulgence kek batik. They also have biscoff kek batik.Normally ,they will use Marie biscuits.

We call this fudge slice in New Zealand. My gran made this and we loved visiting and finding it in the tins. When we would make it with her, our job would be to crush the biscuits, she would give us a rolling pin and let us bash them until they were the right size for the fudge slice.

Another outstanding video and recipe! Thank you so much! I can try this with Maria cookies here if I can't get the type of biscuits in your recipe. Maria cookies are Hispanic cookies, and easy to find because we have so many Latin American cultures here in south Florida. I checked out your Amazon shopping options, but the tile plates were out of stock. I used to go to a Turkish restaurant in Columbus, Ohio, and there was a gift shop there which sold Turkish tiles. I fell in love with them, the designs are so beautiful, and I have a few on my kitchen walls, but I would love dinnerware in those traditional Turkish designs. Unfortunately the ones that are available online are very expensive which makes them out of reach for me. I am so happy to have found your channel. I enjoy your videos so much!

Oh! My mom used to make something very much like this only using graham crackers and no egg. In the wintertime she would add a drop of peppermint oil. She'd put it in a loaf pan. (I grew up in the Midwest US.) I haven't had it in years and now I want some. Thank you!

In Serbia they have similar no bake cake with walnuts (and sometimes with rum 🤤) without eggs called Bajadera. I Sweden we have ”chokladbollar” chocolate balls with oats instead of the bisquits. Both very popular 😊

My grandmother made this all the time, and we just called it "gâteau froid". We add coffee to it as well, and use village cookies here in Québec

We call this salami biscuit in Romania. It is one of my favourite dessert ❤ we don't add eggs in it but we add walnuts and rum essence. It is super delicious!

Awesome. In Sri Lanka we make a biscuit pudding where biscuit and chocolate is layered sometimes into a loaf pan, sometimes into a dish. Time consuming. This is so pretty and so easy. interesting too. Thank you Refika. Love your programmes.

Great recipe and even better personality, Refika! I love your shows, and I can hardly wait to visit Istanbul again! I grew up in Romania and we had the chocolate salami too, but we also included chopped walnuts and the best part...various, pretty colors of pieces of Turkish delight!! No raw egg, though, as far as i recall. I cannot believe that the recipe from the country that invented Turkish delight doesn't use Turkish delight in this recipe, or in pound cakes and in pastries "cornulete" similar with rugelach and such. But all is great, and thank you for your recipes and lovely cooking shows. Refika, how do you use Turkish delight in Turkey if you never include it in pastries and any recipes?

In Tatarstan, Russia we have something very similar called Chak-Chak.but the syrup is just honey no cocoa. It's actually tastes a bit like baklava because of that

This is called gateau salam. I used to married to a Turkish Jewish man from Istanbul his family used to make this all the time. Actually this is very famous among the Jewish community of Istanbul. This dessert has Portuguese and Italian origins.

We make it in South Africa too but use icing sugar and just melt everything in one pot before we add the biscuits and egg. We cut it in squares. Very yummy! Can eat the whole pan by myself 🤣

I like the combination of chocolate and coconut flavors, so I might do this with 1/3 butter + 2/3 extra virgin coconut oil, which is not very cheap but it is still quite available here in Brazil. In Portugal there is a very similar chocolate salami cake... we do add some Port wine to it and some recipes add some almond meal.

In Portugal we call it chocolate saleme (salame de chocolate ) it is very good. I had a a friend at school who was a boy scout and it was its specialty

How long is your growing season in Turkey? We have to wait until the chance of frost has passed (end of May ) to plant things in our gardens. Then there is a chance of frost again in September. You always seem to have so much fresh fruit and vegetables. Love your channel. 😊👍👍❤️🇨🇦

(Antifreeze is what we put in cars, frost free freezers are the freezers that have a defrost cycle that is problematic). The cake looks DELICIOUS. I dislike cake, but I think I would -like- LOVE this. Must ask: what is ruby chocolate? I have never heard of it.

It does look delicious! In portugal we make sslame de chocolate, looks similar to yours, but there are no eggs in the recipe. Is it safe to eat raw egg like that? Thank you

I tried out your recipe but fear i've taken too much milk since the mass stood too liquid (we have big cups so it was likely really too much). Do you have a specific quantity in milliliters? Wow, this is a bit like Chocolate Tiffin - although they usually use a tin and add a layer of melted chocolate across the top.

In Sweden it's called "Radiokaka" (radio cake, weird), or Margaretakaka (Margareta Cake, also weird!). But we use "Mariekex" instead of the bisquits you use. But now they moved the factory abroad and we will have to find another brand. It's always better the closer to you it's made, right? :-)
