1 Cup prepared Refried Beans*

Follow the exact recipe. Just skip the Cheese in the recipe.
1 Tbsp Butter
Mexican Cheese Blend
For Veggies
1 Tsp Vegetable/ Avocado Oil- 1 Tsp
1 Garlic Clove - Finely Chopped
1/3 - Cup Finely Chopped White Onion
1/3 - Cup Finely Chopped Green Bell Pepper
1/3 - Cup Frozen Sweet Corn*
1 Jalapeno - Finely Chopped*
Finely Chopped Cilantro
Salt & Pepper to taste+ pinch of sugar
FOR SERVING
Queso Fresco*

NOTES / TIPS
1) If using Fresh corn. Steam them first.
2) I have added 1 Finely Choped Jalapeno. Missed filming the part.
If sensitive to heat you can skip it.
3) Do not skip the thickening of the beans. Otherwise, it will affect the texture of the filling.
4) Do not skip the step of frying the tortillas. Frying the tortillas helps to prevent them from tearing or becoming soggy.
5) Covering with the foil helps to retain the moisture and prevent tortillas from drying out.
BAKING INSTRUCTIONS
Pre heat Oven.
Bake at 375 F for 20-22 minutes
