As a hobbyist and bakery enthusiast, this chain is fascinating and very informative as well. Getting up early to do what you love knows no boundaries. I watch this channel in the middle of the night while preparing batches ^^ Magic. Cheers from France.

They have “customers” to whom they regularly send bread once a month or every two months. They make and send bread to these people.

Is it a CSA model? Do the members pre-pay for the bread for the year or season?

This is not CSA model. Their business model is not to recruit new customers every day via the Internet and ship bread. They recruit “regular customers” who ship bread once a month or every two months, and they make bread on a steady basis.
