I just wanted to let you know that the reason the enderman keep teleporting outside the farm is because endermen can’t spawn on leaves, but they can teleport on them, so you have to Waterlog the leaves outside the farm.

For Enderman farm, you need to place hoppers underneath it so whenever the Enderman dies, then you will get all the ender pearls and barrels so you guys can bring it over or instead of barrels. You can use mine with chest to bring them over to the main island.
