Do you suggest taping off the floor and baseboards to prevent water damage? Or will the mess be minimal this way? The floor is not as important to me as the baseboards because the floor will also be replaced.

I wish I would've watched before I botched my bathroom. You mentioned not using a wallpaper scraper. What do you use instead? What kind of spatula?

I typically use about a 4 inch spackling knife (puddy Knife).

If the baseboards are finished, that is previously painted, stained or varnished., they should be fine, just need to be wiped down with clean water as you clean away the paste from the walls the get any paste of them.

this was great when I was young my mom took wall paper off with a special steamer and it made a real mess I happy too see there is a better way
