That's how most Chinese restaurants roll . Anyone that work in a restaurant before will tell you most restaurants rarely follow any food safety protocol .They only do it when getting words that the food inspector is coming .

Dirty Dining could be so much more than what it is. They should show the outside fo the restaurant, then a freeze frame of the owner and have a call in session whereby the callers guess and bet on what excuses the owners will use. The caller who guesses most accurately wins a prize. "That expired food is for us". "I don't know". "No English", "We aren't really open", "I'm not the manager". "We just made that mess". "The rat is a pet who eats the cockroaches"
