For those who don't know, PTFE or Teflon tape is not used for sealing. It lubricates the fittings at they are tightened down for a better seal.

That is the cleanest fryer I have ever seen. I've had to use a torch to melt the grease on some of the bolts. I always put a small service cord on the pump and wire nut it back together, not code but it works for me.

Well said, long sleeve shirts save you from a lot more than grease. This looks like an all in one motor, Usually frymasters have the pump separate and thats a filthy job in the middle of rush hour at Mcdonalds. By the way, every hour is rush hour at mcdonalds. Finally someone on Yt that does both hot and cold. I'm Lovin' It.

@@jabroski69 You would have to find the distributor for your area. It'll be the company that handles the warranty work. No guarantee they deal exclusively with Henny Penny though, this has really been my only experience with kitchen equipment.

Getting that pump out and replaced was a lot easier than getting a '71 Pinto starter out & replaced...that I got volunteered for by Mom for a co-worker. And yeah, wear gloves. AND KNEE PADS for cryin' out loud...and I'd use pipe dope instead of teflon tape.

I worked for Wendys for 10 yrs in 3 different stores. I saw our fryer pumps replaced many times. I don’t know why Henny Penny didn’t design them differently. I would have design it with the pump easier to get to and maybe someplace not near all the splashes of grease.

This fryer is in great shape. The grease after many hours of use congeals into rubbery plastic that needs to be removed by any means necessary to get the job done.. Its not fun work.

I found your video painful. You did everything the hard way. It takes me 20 minutes to swap out a filter pump. Channel locks, 7/16 socket and a screwdriver is all you need. Disconnect flex hose, disconnect pipe hose with channel locks. Remove right side panel, disconnect pump conduit. Remove 4 7/16 bolts from motor base, pull motor and change fittings and conduit. Remember new motor comes wired for 208v, rewire as needed and reverse above listed...20 minutes.

An extra 10 minutes and you can re-use the pump. Two 1/2" bolts on the flange, replace motor, put new seal kit on it, possibly rollers. Saves customer money and you don't have to fight with the fittings.

Restaurant equipment was by far my least favorite thing to work on. Especially in a restaurant that is 24/7. They never have time to clean anything. Always remember to bring shit clothing because of the nastyness.

For those concerned, that's actually a rather clean fryer. Unless they're brand new, it has grease everywhere. Good video Bill. Out of curiosity, if the pump gets clogged but the motor is still good, do you replace the whole thing or just the pump head? We typically do the latter.

I normally replace the entire assembly only because I dont know how long the motor has been locked up for and what sort of damage it has incurred from overheating for days upon days. On top of that my customers would rather spend a few extra bucks to know that they wont have to worry about that filter assembly anymore

I have been working on the evolution elites for a little over 2 years. Have it down to a little over 45 minutes on a motor/ seal kit change out. They have a conversion kit, diff pump, motor and mounting plate that is more robust. Recommend looking into it. Was the pump bad and you couldn’t just install a new seal kit in it? I have only replaced one pump due to being broke on the inside. Went to Henny Penny last year. Great facility and did training for a week. Nice to see a hot side video! Keep it up, love the videos

Can anyone advise on why the pump on The HP Evolution elite would loose prime at least once a day...got off the phone with Henny Penny techs, they have never heard it before. I've changed the rollers to eliminate some thoughts, the pump would express filter, dispose, fill from pan multiple times no problem. Then I get the call that the oil stayed in the bottom pan. I manually prime it..Repeat. Any ideas please?

I would have thought that kitchen equipment service would be done by a regular kitchen service company (assuming that is a thing). I can see that it is mechanical work like any other. Is this pretty standard (kitchen equipment work by a HVAC service company), or do you do it because you work in a lot of restaurants?

We do it because we are sort of a one stop shop if you will, that and Ive done alot of kitchen equipment repairs. There are businesses out there that only do hotside equipment but I think most of those places are starting to expand because our customers dont want to have to one company for the fryer and another for the cooler and another for the HVAC system-- we try to take care of all there needs, and they give us more business and more locations to service.

Quick question what is the highest temp of the grease allowed to be ran through that pump? I’m guessing 90 deg. Place I worked at would do it at 150 plus and was always changing hoses 🤬🤬 good times

Hey. Cool video 🙂👍 I have a question about automatic oil valves in electric version of HP. Is there any way to open oil valve manually (in menu or by screwdriver?). Chef dropped metal rod in to the oil drain, valve closed and jammed the rod. I didn't tried to open the valve by "express cleaning" yet and probably won't work, because vat is empty, but maybe there is a way to open manually. I'll be thankful for any hint.
