Just a small tip for cooking in the tandoor, put a sacrificial half a potato wrapped in foil at the bottom of the skewer which protects the first chunk of chicken from getting burnt!

I use a sacrificial (mashed) potato when I’m cooking daal and want a slightly thicker consistency, works a treat

@2:29 you don't actually mention how much Orange food colouring to put in. So I made my recipe as follows 1 tbsp Garlic / Ginger Paste A good squeeze of lemon Juice 150g Natural yoghurt 2 tsp Coriander powder 1 tsp Cumin 1 tsp Turmeric 1 tsp Kashmiri Chili 1 tsp Paprika Powder ¼ tsp Black Pepper ½ tsp Cardamom Powder 2 tsp Kothari Methi 1 ½ tsp Dried Mint 1 ½ tsp Salt ½ tsp TRS Orange food Colouring 3 ½ tbsp Tandoori Masala Powder

If you want taste in tikka, never use chicken breast part, use chicken thighs boneless or with bone . You will get nicely juicy and tasty tikka. And always use homemade ginger and garlic paste for tikka not powder. - From India

Hi, Al. That was another superb vid. I’ve lived in France for a few years now, I’ve pretty much given up on Indian restaurants here. I find that the flavour and spice has been subdued too much, due to catering to French tastes. Even when I ask them to bump it up a bit and point out that I’m not scared of flavour and heat, it’s still not there! I cook a lot, mainly classic French and European dishes in the kitchen, and BIR since I discovered you👍 I do a lot of smoking and slow cooking on the barbecue, too. In the past, I have travelled a lot, but my two favourite Indian restaurants are in West Wales, Mehfil’s in Pembroke and Barbucci’s in Tenby. As for France, the best place to eat Indian is chez moi, and all thanks to to you👍

Tip for getting meat off a skewer. Pull it up towards the handle slightly before you try to push it off the end. It breaks the seal and slides off easier..

I didn't really fancy adding honey to this... BUT then I thought.... 'Have I EVER had a crap meal from Al's Kitchen?' Well the answer was,a resounding NO, so I made it EXACTLY to the recipe. Bloody Hell, Al!!! I have never tasted such a delicious chicken tikka IN MY LIFE. I have frozen three quarters of it ready for the 30 minute Madras later this week. We can't wait 😁😁😁

Hi Al, I got into curries through watching Misty Ricardo vids and now I'm going to get into yours. I'm a madras curry guy, 75 years young living just outside manchester. Most of Misty's recipes are for two people whereas l usually cook for three which means I have to use more base and chicken ( does additional extra base weaken the flavour?)I watched your gunpowder madras yesterday so that will be on the "to do" list. I usually put the chicken in raw as, doing tikka takes time and work ( I'm lazy). Enjoying your videos Al you have another recruit from the north west mate. Thanks again.

Having not had a good curry since the beginning of last year I stumbled across Al’s channel and decided to invest in all of the spices, etc. I made this chicken tikka recipe this morning in preparation for the gunpowder madras recipe this evening and it absolutely rocks! We don’t have a tandoor so used my Weber bullet and the results are stunning. Thanks for the content Al, looking forward to following some of your other recipes.

Not only does this look like a fabulous recipe it has already cheered up a miserable damp Tuesday morning in November seeing the summer sun and watching you cook in the garden and enjoying a beer from the summer past. I'm just going to get a pen and do the list of ingredients for this chicken tikka and the "new base gravy". Even considering a Tandoori oven purchase for the summer next year. Very Tidy work AL !!

Have you tried a Vacuum marinador , put in the chicken, pump out the air. 1 min in there equals approx 1 hr normal, so half an hour and you’re good to go👍🏻 I cook in a home made tandoor, 2 big clay plant pots in a bustbin, gets to over 500°c👍🏻

Hi Al, another great video, got to be a Chicken Jalfrezi for me although i do love a chicken saag from time to time too. Living in Oz now and the curry shops are a bit different to those in Blighty. When i lived over there fav place was Munals in Worcester Park or Samrat in Putney. Oh i miss London Pride!

Superb Al ... you are certainly no1. As you know I've followed you for a few years now. And we have had a few chats. But as requested. Favourite curry... Pathia , very rarely eat in restaurants as quality is so inconsistent. Currently from Wiltshire but moving back to Devon next year.

Al there's really no need to use food colouring. Instead of colouring try deghi mirch. It's deep red and isn't spicy at all. You can use a blend of Kashmiri and Deghi if you want. You can also mix Deghi mirch with ghee and finish at the end for colour! Great work as usual mate! Really hope you end up with a take away or restaurant

That lovely squelching sound of the chicken, made me feel a bit 🤮 I keep a box of gloves for doing that and chopping 🌶️ So a tandor is basically the same as doing it on the bbq. Btw your videos are far more interesting than Misty ricardo, who never speaks or shows his face, so doesn't actually explain anything.

Excellent dish, however, I definitely missed out the food colouring and honey and reduced the salt by 50%, but added a teaspoon of hot chilli powder.

Any stains with spices or food colouring on worktops or clothing do NOT touch with water first , spray with cheap hairspray and wipe top down with wet cloth after a few mins , clothing after spraying with hairspray leave a minimum of 10 mins then wash as normal and it will be gone 👍same goes if using hair dye

Love the videos but really why put colouring in, in this. Makes no sense to me, the flavour etc is there why add to the risk with horrible things like colouring. Just saying.

Don't use food colouring pal, use kashmiri chilli powder it adds colour without the heat

Hello Al, when I add up all the dry spices, fenugreek, salt and pepper, it comes to 7.25 Tbsp (3Tsp = 1 Tbsp) for 150g of yoghurt, however I have bought your Spicy Joes Restaurant Style Tikka Blend and it says 2 - 3 Tbsps for 200ml of yoghurt. Should I just increase the quantity of the Spicy Joes Restaurant Style Tikka Blend to 7.25 Tbsp and just use 150g of yoghurt? P.s. My family and I adore your food! You know you've hit the jackpot when your oldest son says "far better than the local Indian Dad!"

Masterclass as usual Al, I do mine on the Weber with a bed of sliced onions on a baking tray and finish off over direct heat. Yours looks amazing!

I’m from Michigan, USA. In my city, there are over 12 Indian restaurants and 3 Indian grocery stores. Thankful I can ha e all of this at my fingertips. So since to make this vegan with tofu, just make the mix and the marinate for 24/48 hours before I quick fry the tofu. Is this correct?

I'm in the Philippines and trying this recipe using Calamansi instead of lemon juice, gonna go the full 48hrs with the marinade then bbq very hot. I will let you know. Here in the Philippines Indian cuisine is non-existent so I really appreciate your videos.

Another great video Al! my favourite curry is a Jalfrezi from Kaz’s Indian in a place called Sawston, a village just outside Cambridge. The combination of chunks of onion, and chilli are sublime.

"Treat yourself to a tandoor" You're having a f#*king laugh mate!! At £300 plus for the cheapest, and going up to nearly £500 for the large version, I find that to be robbery for what is basically a glorified barbecue that would never get used unless I was cooking chicken tikka and naan bread..... No ta, if I want that smokey charcoal flavour I'll just cook mine on a barbecue 😆

Hi Al, excellent video, I have almost the same setup (use a meat thermometer with the Puri) . Lamb Legs in the Tandoori are awesome too. Done a spatchcocked tandoori chicken in there following your receipe

Had to come back and comment >>>>> As per my 2 days ago comment.... I got the ingredients and made "base" (2nd version) sauce (6 litres) and put a 7 breast batch of tikka in marinade (24 hrs)... 24 hrs later to celebrate my daughters new job we had... popadoms (and all the shizzle)..... onion bhaji (Al's recipe) - starter then a butter chicken -tikka (Al's) for 1 daughter chicken dhansak tikka (Al's) for 4 channa sag (Al's) (everyone loved this ... even people who had previously said eeeeugghhhh no chance I like that !!) Bombay (+ cauliflower) potato (Al's receipe + mods for the cauliflower plain Basmati rice (ran out of time to do pilaf ) Was in the kitchen 8 or so hours + 3hs for the tikka marinade and base but thoroughly worth it for some absolutely fabulous food. The chicken Tikka was truly a sensation.... as good as any I i have ever and I had to cook it on a grill (no Tandoor). Al I salute you sir top top drawer !!!

The food colouring doesn't affect after its marinated ? Love the videos you've cost me a fortune in Indian cooking utensils etc but I'm loving cooking the curries , can I ask if your recipes are for 1 do you just times the spices x4 if it's for 4 people and so on ?

Kia Ora Al! New Zealand calling. What do you think about chicken thighs instead of breast? I think they have a better flavour.. Also, the question of the barbeque comes in. A good place to cook tikka? I think it is. Al, I love your recipes, and can't wait to get your books. Cheers Bro!

Hello Al, this video looked so good that I had to go and buy a tandoor, so I got the SS1 Ultima from Puri, which was delivered a few days ago. (They're on offer at the moment folks!) Before I can try this recipe, I'll need to oil the tandoor and run a 1st light up to help 'run it in'. If my tikka comes out anywhere near as good as yours looks well I'll be over the moon, as will the rest of the family as they love the recipes verily much. Keep up the Stirling work young Sir!
