Here's a detailed recipe for homemade Seekh Kabab:
Seekh Kabab
#### Ingredients:
- 500 grams minced meat (beef, lamb, or chicken)
- 1 medium onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1/4 cup fresh coriander leaves, finely chopped
- 1/4 cup fresh mint leaves, finely chopped
- 1 teaspoon red chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon salt (or to taste)
- 1 tablespoon lemon juice
- 1 egg (optional, for binding)
- 2 tablespoons gram flour (besan), toasted
- 2 tablespoons oil (for basting)
#### Instructions:
1. *Prepare the Meat Mixture:*
- In a large bowl, combine the minced meat, finely chopped onion, green chilies, ginger-garlic paste, fresh coriander leaves, fresh mint leaves, red chili powder, ground cumin, ground coriander, garam masala, turmeric powder, and salt.
- Add the lemon juice and mix well.
- If using, add the egg and toasted gram flour to help bind the mixture. Mix thoroughly until all ingredients are well incorporated.
2. *Chill the Mixture:*
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This helps the flavors meld and makes the mixture easier to handle.
3. *Shape the Kababs:*
- Preheat the grill or barbecue to medium-high heat. Alternatively, you can use an oven preheated to 200°C (392°F) with the broil setting.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Take a handful of the meat mixture and shape it around the skewers, pressing and molding it into long, even shapes. Ensure the meat sticks well to the skewer.
4. *Grill the Kababs:*
- Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally and basting with oil, until the kababs are cooked through and have a nice char.
- If using an oven, place the skewers on a baking sheet lined with aluminum foil and broil for about 10-15 minutes, turning and basting occasionally.
5. *Serve:*
- Once cooked, remove the kababs from the skewers and transfer to a serving platter.
- Serve hot with naan, paratha, or steamed rice, and a side of mint chutney, yogurt raita, or salad.
