thanks ma. I made the same method how you said. but 5:1 salt was too salty. so I removed the water and threw away. i then boiled plain water and after completely cooled added to them and later grounded mustard and red chillies to them. now I'm worried that water is less and vadu might get spoiled. should I add more water or oil (nalla ennai). pl clarify. also how long to keep stirring. thanks 🙏

Hello Madam, I put one kilo vadumangai. It turned out very tasty. Now I want to put three more kilos.The original one kilo vadumangai has got lot of water in it. Can I pour that water in the new three kilo vadu mangai which i will be making?

Mam I added one glass of salt rock salt powdered at home for five full glasses of 'mavudu'. Salt has given a lot of water.I used the salt water and ground mustard seeds and red chilli.now after a week the pickle really looks good but salt is a bit more. Even mango tastes salty.how to set this right.please reply.Thank you.

5:1 makes it extremely salty.I tried it last year and the mangoes shrunk terribly ( they became too small and rubbery).I would suggest you go with 8:1( for 8 measure of mango,1 measure of salt,1 measure of chilli powder and 1/2 mustard powder). Hope this helps.

After how many days, will the pickle be ready? It is 16 days now. I followed the same procedure. Now the maavadu has shrunk and is small. Smell is also so nice. But maavadu is very hard to bite. Please advice

Flight ✈️ tickets 🎫 are slashed down to Trichy and I have another good reason visit Srirangam to get more mavadu to make this pickle. I guess black pepper can be used instead of chilli 🌶️ or leave it as uppu urugai goes well with Palaya sadham.
