I was 12 when I started after watching grandma and great grandma who were professional. When my grandma passed I started to make supper breakfast for my grandfather who was shocked from first day he came home to 3 course meal started with salt mackerel run down with ground provisions and both flour and banana dumplings and green banana. Which was all from memory and never tasted while cooking, only smell and visual. That sabbath morning I made liver and onions with chocho and green banana and cornmeal dumplings and yellow yam. I also made rice and gongo peas ketchup fried chicken 🍗, Jamaican coleslaw and curry goat. Living in Canada past 30 years, I still make Jamaican food from memory as a child, some even from watching and smelling street food
